Small dried foods are a long lasting compact option. I do a lot of bagged tuna, pasta sides, jerky, ect. The water is tough due to size and weight that is unavoidable, but plan on freqent resupply stops and that can cut down on how much you need to carry. Ride safe!
Hard not to find water at most places. Take a 48oz or larger stainless container along and refill it. Backpack water bladder. Tank bag water bladder. Don't drink out of water bottles especially when they warm up. Plastic chemicals are toxic. Stay away from Pepsi and Coke water, buy spring water.

Not the most flashy bike out there but all in all a great versatile bike at a great value. Reliability and maintenance is as good as it gets as well.
