I'm pretty sure he's using a tracker (that's probably not what it's called) in whatever editing software he's using. Basically tracks the object's (in this case the dead body's) position and attaches the text to it.
Regardless, Fitz is still an awesome and obviously hard working editor. I think he said he spends like 50 hours on a single video. Definitely pays off.
