Miso Tantanmen - A Creamy and Comforting Bowl of Ramen
This creamy noodle soup brings together the rich flavors of sesame, miso, and soy, paired with fresh, vibrant toppings. A plant-based twist on the traditional tantanmen, this recipe is as comforting as it is flavorful, offering a warm embrace in a bowl. Perfect for cozy nights or when you’re craving something hearty and satisfying.
Ingredients (Serves 2-3)
Broth:
3 tbsp tahini (sesame paste)
1 tbsp miso paste
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp rice vinegar
1 tsp chili crisp
1 garlic clove (minced, optional)
Juice of 1 lime (optional)
750 ml vegetable stock (1 cube + 750 ml boiling water)
Toppings:
1 block firm tofu (crumbled and fried)
Coriander
Baby corn
2 tbsp soy sauce
1 tsp each of minced garlic, ginger, chili crisp, and Korean red pepper flakes (optional)
200g noodles of choice
Garnishes: spring onion, red chili, sesame seeds
Salt and oil (as needed)
