I like to mash the potatoes add a little onion and some seasonings. Roll them in corn flake crumbs and fry them as potato pancakes and of course you have to have gravy

I've never home canned potatoes (we had a root cellar and they kept fine all winter) what surprised me is the fact they aren't mushy like I thought they'd be.
How did you pack them for storage in the root cellar? Just placed in a box or did you do something "special" to them? Curious! I'd love to be able to store larger quantities as is, but they just go bad so fast. I don't know if it's because I live in the hot, humid south or if I'm storing them wrong.

Thank you for this video! I canned potatoes last year, and so far I've only used 1 jar (I made fried taters by browning in butter). I think potato salad will be a great idea for jar #2 🙂 (Maybe some 'loaded' potato soup for jar #3??)

Have you tried using a cornstarch slurry to coat your roasted potatoes? This is what America's test kitchen recommends for crispy roasted potatoes.
I haven't, but now I really want to lol. I'll try it with arrowroot powder next time I make them (as we don't use cornstarch). Thanks for the tip!

Our favorite use for canned potatoes is to make a single layer of them all around a meatloaf. We are a family of two, so we do a small meatloaf in an 8 by 8 glass pan, which fits in the toaster oven, and there is lots of room for the potatoes. They cook in the grease from the meatloaf, absorbing flavor, and browning. By the way, I'd like to know the name of that little tool you used to pop off the lid from your jars, and where to get one. I love your channel, it's like having a friendly neighbor show me ways to cook.

Have you tried using heavy whipping cream instead of milk and flakes for your mashed taters?
I haven’t. Heavy whipping cream isn’t something we buy, so it’s never on hand in a pinch. I bet it’s delicious though! 😋
Ah! I've been eating a ketovore/carnivore diet for over 7 years, so I don't eat potatoes, but I DO always have cream on hand. I buy 5-6 quarts at a time.😁
You haven't eat until you've eat a potato cake sandwich. jus sayin.
