We need to get Ebbers to work with Kush's scraps, what can a Chef do with the scraps of a Chef. It would be insane, because it would show that even chefs in professional kitchens do indeed have waste. Not a criticism, but to expand on the subject of food waste. And professional kitchens do have waste, that's a fact.
I've just done this for the longest time as like a challenge for myself, and the thing is even when I was shitfaced back when I drank I would do this and I came up with so many amazing uses for things that nobody would have thought of sober lol Like with a little mayo and mustard and a whisk you can make a broth, even an instant ramen, feel much fuller and luxurious lol, throw in a bit of ginger from a sushi plate you had for lunch and a little pre-ground garlic from a tube and you have a legit soup.

This is one of the single best performances from Jaime I think we’ve ever seen. His technique was fantastic and it’s incredible to see what he was able to do out of his comfort zone
I mean..... except for that he made a broth, made some noodles, and made some meatballs. And had already (at least attempted) to make hand pulled noodles in the past. Feel like i've seen FAR more impressive dishes from him even when he was just completely winging it without any sort of plan.

Pulling the noodles was fairly good, but it honestly isn't that difficult to do it how Jamie did it. Is it easy? No, but it's not exceptional. And as always, Ben did a fantastic job of creating multiple small dishes with the (generous) amount of scraps he was given! He even made a seasoning with the peels and discarded root/vegetable ends, and added a quick lil' use for egg shells in there, too!

Oh wait... that's describing making a Beef Wellington. If you break down cooking *anything* like that, it sounds unimpressive. Snail porridge? Cook some snails, cook some porridge, blitz some herbs. It's the seasoning, plating, and cooking (expecially proteins) that makes the difference between food, and an experience. All three of which were on full display today. Well on Jamie.

I'm not a chef, and I don't even consider myself a "cook", but aside from the noodle dough ingredient ratios, It seemed simple enough to do and still come out with a half decent dish. What Ben came up with using the scraps? Not a chance I'd be able to even THINK of any of that on the fly even with the ingredients laid out in front of me. And yes, oversimplifying cooking dishes can make them all sound trivial to make. But in the case of Beef Wellington, you also have to make sure that it's baked perfectly, otherwise you could end up with anything from nearly raw beef and barely baked pastry, to slightly overcooked beef and roofing shingle pastry. On the other hand, pasta typically floats when it's cooked or nearly cooked. Meatballs float when they're about done when boiled. He also added those other seasonings to the meatballs... and then boiled them, which probably ended up seasoning the "porky water" he gave to Ben more than he did the meatballs he used in his dish.
@@theElemDragon you are drastically underestimating the difficulty. I'd suggest, try making just the noodles. You'll quickly find out how difficult just that step is. Too much water? They don't stretch right. Too little water, they break. The amount of water you need to add will depend on the fineness of the grind, the varietal of the grain, and your local conditions. Following a recipe may or may not work, then you have to actually have the skills to work the dough properly. You are either underestimating your own skills if you find it easy. Or overestimating the skills of the average normal cook.
This has quickly become my favorite format! It would be pretty cool for a last minute addition of this format to the live show! Bet you will have plenty of scraps and a surplus of chefs!

This format has been so helpful for me as I’m trying to learn to reduce my family of five’s food waste. I made a pesto from the outside of a cauliflower I used for a previous meal, inspired by one of your videos. My teenagers were shocked they loved it so much. Please keep these videos coming!
I really love this format! We get to see a normal planning and cooking (fairly) confidently with a recipe of their choice, then Ben comes in, works some chefy magic (always impressive to watch), and combined I think it's one of my favorite things. Great job to everyone involved!
OMG I literally screamed nooooo when I saw J just garnished the noodles with raw lap cheong ("wind" sausage) and "uncooked" tofu puffs. 😮🙈 Lap Cheong is raw and needs to be cooked and the tofu puffs can be eaten out of the packet because they're technically cooked by frying in the factory, but they'll be chewy and dry AF if you don't boil/simmer them. Hence why they're normally dropped into hotpots or soup bases to boil for a bit to let them soak up all the goodness and rehydrate. But otherwise, fantastic to see what you can do with scraps to avoid food waste, especially want to taste that egg custard.

I love this format. One of my favorite series is the chef versus normals grocery challenge, but this one makes the chef improvise just as much as the normals, and it really helps me think through what I can do with my own leftovers and extra bits.
I'd love to see a Scraps themed Pass it On. First the normals have to go through a Pass it On, but after it is completed the Chefs then need to take the scraps from the normals and use that as the basis for their Pass it On.

Yep. Me as well. Pity my poor coworkers catching me humming it in my office. Complete with toe tapping. As the fishermen intended. Except the office part.
Ben smashed it, the broth of any ingredient holds everything. Let it be veg or chicken or any ingredient's broth, once you boil it and strain it has all the nutrients are in the broth which creates the flavor and taste.
Almost nothing Ben used would have been tossed in the bin, though. Eggs would go in the fridge as would all the meat. Won ton wrappers would have gone in the fridge or back in the freezer. The only thing Ben 'saved' from the waste is the stuff out of the InstantPot and aromatics - even then, most of the ginger would have been saved for another day as it lasts a long time. Likely the same with garlic, but I didn't see if Ben used any whole cloves or not. Having to purchase more than you need because it comes pre-packaged is a real problem and does contribute to food waste, but it does not instantly make the extra food 'scraps'. It was a real cop-out for Ben to use them as such in the video.
@@chandrawong449 On one hand, it IS technically a cop-out, I agree with you on that. On the other hand, there's not a whole lot of scraps that Jamie left him. Some chicken from the wings and a bunch of aromatics. It's not going to make for much good content if Ben auto-fails the challenge because of that. Besides, the purpose of these videos is to get the audience rethinking how they can use scraps, and whatever Ben did definitely achieved that.
These scrap videos are so fun. It gets to show the "normals" making really cool and challenging dishes without having to worry about wastage and the chefs show what you can do with very little. So cool!!

I would really love if you showed a kind of dedication to engaging more with veggie community members. I’ve been watching for years but it’s not all that often I get to watch you guys make a recipe I can actually make myself. Especially given the sustainability side, it would be great to see some kind of pledge, like a veggie dish for every meat dish?

the dried vegetable scraps used as seasoning is my favourite, definitely will try at home. Would be interesting to see what chef can make out of scraps from dishes made by another chef, rather than normal.

These scrap challenges are amazing, yes, please continue to do them. I often find it so beneficial to make a meal out of 'nothing' as it were, and it's a fun challenge to see what can be done with it. I'd also love to see the guys try to make 1 portion of 1 meal for like a couple of quid all in and see what they could suggest!

Saving the steam hits hard right now. In Calgary we are on a 4 week water ban due to a major water pipe burst. Saving all shower water, pasta water, dish water to water our plants.
Didn't expect the shanty but that was fun. When I saw Ben using the soy sauce it reminded me of the soy sauce price point comparison video from a while ago. I found that one really useful because it introduced me to the different types of soy sauce and I've actually had a blast since then playing with all of them. It would be great to get more of those because I feel like they're some of the most informative videos you put out.
Definitely more scrap episodes, but like the drying out and making spices, more variety to the approach perhaps? Been exploring 'no wastage' approach at home myself and its been mindboggling what can be done with the drying out of some scraps like skins to garlic/onion and then spice grinding them and some seeds like butternuts etc and also skins, blanching before freezing for bases to broths/soups in the future instead of throwing away, even the skins etc post boiling for a broth, liquidizing them and freezing them for gravies... So much more depth to the approach of everything can do with leftovers/the peelings/cuts off would usually discard.
I'm Danish living in Portugal, and I can honestly tell you that the rest of Europe's thoughts about the English kitchen are not very high. My respect and admiration for English chefs have now risen dramatically because of you, Ebbers! I love your show! ❤

It's a very satisfying series. I've hated food waste for almost my entire life (probably 0-4 years, not so much but several decades after that) so it's so much fun seeing it being creatively foiled. And I just had the thought "hmm, maybe I can make bang bang noodles too."
Given how Jamie has been wowing us for a while, I’m not surprised he’s being ambitious. Also, love watching someone make noodles after eating noodles for dinner lol

Ben smashed it, the broth of any ingredient holds everything. Let it be veg or chicken or any ingredient's broth, once you boil it and strain it has all the nutrients are in the broth which creates the flavor and taste.
This is my favourite format, for so many reasons. Ebbers is a genius.

I loved seeing that.
Almost nothing Ben used would have been tossed in the bin, though. Eggs would go in the fridge as would all the meat. Won ton wrappers would have gone in the fridge or back in the freezer. The only thing Ben 'saved' from the waste is the stuff out of the InstantPot and aromatics - even then, most of the ginger would have been saved for another day as it lasts a long time. Likely the same with garlic, but I didn't see if Ben used any whole cloves or not. Having to purchase more than you need because it comes pre-packaged is a real problem and does contribute to food waste, but it does not instantly make the extra food 'scraps'. It was a real cop-out for Ben to use them as such in the video.

@@chandrawong449 On one hand, it IS technically a cop-out, I agree with you on that. On the other hand, there's not a whole lot of scraps that Jamie left him. Some chicken from the wings and a bunch of aromatics. It's not going to make for much good content if Ben auto-fails the challenge because of that.
Besides, the purpose of these videos is to get the audience rethinking how they can use scraps, and whatever Ben did definitely achieved that.
This was impressive. Jamie did a really great job, and seeing Ben figure out things to do with scraps was very inspiring.
These scrap videos are so fun. It gets to show the "normals" making really cool and challenging dishes without having to worry about wastage and the chefs show what you can do with very little. So cool!!

I would really love if you showed a kind of dedication to engaging more with veggie community members. I’ve been watching for years but it’s not all that often I get to watch you guys make a recipe I can actually make myself. Especially given the sustainability side, it would be great to see some kind of pledge, like a veggie dish for every meat dish?

These scrap challenges are amazing, yes, please continue to do them. I often find it so beneficial to make a meal out of 'nothing' as it were, and it's a fun challenge to see what can be done with it. I'd also love to see the guys try to make 1 portion of 1 meal for like a couple of quid all in and see what they could suggest!

When I saw Ben using the soy sauce it reminded me of the soy sauce price point comparison video from a while ago. I found that one really useful because it introduced me to the different types of soy sauce and I've actually had a blast since then playing with all of them. It would be great to get more of those because I feel like they're some of the most informative videos you put out.

Definitely more scrap episodes, but like the drying out and making spices, more variety to the approach perhaps? Been exploring 'no wastage' approach at home myself and its been mindboggling what can be done with the drying out of some scraps like skins to garlic/onion and then spice grinding them and some seeds like butternuts etc and also skins, blanching before freezing for bases to broths/soups in the future instead of throwing away, even the skins etc post boiling for a broth, liquidizing them and freezing them for gravies... So much more depth to the approach of everything can do with leftovers/the peelings/cuts off would usually discard.
I'm Danish living in Portugal, and I can honestly tell you that the rest of Europe's thoughts about the English kitchen are not very high. My respect and admiration for English chefs have now risen dramatically because of you, Ebbers! I love your show! ❤

It's a very satisfying series. I've hated food waste for almost my entire life (probably 0-4 years, not so much but several decades after that) so it's so much fun seeing it being creatively foiled. And I just had the thought "hmm, maybe I can make bang bang noodles too."
