  • Here in Florida we get a lot of honey with a moisture content above the recommended 18%. To avoid having the honey ferment, we use this method to dry it out before bottling.

    I use a drying room. I crass stack my honey supers. I dry it before extracting. Can pull from 22 percent down to 16-17 in 24 hours at 90 deg

    I was heating some comb to get it ready for the extractor and accidentally had the boiling water and honey mix together. I don't want to cheat and have the honey cut with water. But I don't want to lose the honey either.
    Is there a way to separate the water from the honey? I'd hate to lose this... but I don't want to cheat either.

    What gauge are the sheet pans you ate using? Do you happen to know how much honey you were able to place on each pan?

    It’s dries faster while it’s still in the comb

    Here I thought you used towels to dry it... how much do you spill out of the pans? I’d put half of it on the floor.

    You should have a dehumidifier and fan inside the room where you uncapped your frames to go to the extractor. When you turn your extractor to spin, all the humidity in that room goes to your honey!! And after that, you take all the honey to your dry room, which is the right thing to do after you loaded your honey full of humidity in the first place!!. Get a couple fans on the top of your frames and uncapped area with a good dehumidifier set way before the harvesting to get the humidity in that room around 30, 35%, and let us know the results.       Absolutely, that is how we normally use our drying room stacking honey supers with dehumidifier and fan. I only use this method sometimes in the summer when the bees cap mangrove and cabbage palm honey 22-24% moisture. I can’t get the capped wet honey down before a small hive beetle larvae hatch. This I extract it and dry it this way. It’s a pain but it works.

    Bet a squeegee or screen printing squeege would work great for scraping the honey off the pans.

    Great set up. Does the moisture content affect the taste or shelf life ?

      Yes, If the moisture content is too high the honey can ferment and taste sour.

    That is an awful lot of work and a lot of possible 'contamination' of you honey. I effectively dry honey while still in the comb using a small room with a powerful dehumidifier, and heat and a fan if needed. Might take a little bit longer, but not much, and requires almost no extra work at all.

    You REALLY need to have the honey flowing... Only the top 1/4" is all that dries if it's just sitting there

      It doesn’t matter if the top layer dries quicker in the pans. When it gets mixed back together you’ve lowered the overall moisture.

    We have a divise to dry up 8 drums of honey in 1 or 2 days. No heating or vacuuming. Very cheap. Sorry, can't tell you, it's my business secret..
    What you doing now it was my first idea.. Just do not stop, do not be happy and proud of what you got.
