I'm just getting into freezer meal prep, but I've been a professional cook for almost 20 years and I wanted to compliment you on your planning and mise en place. Have either of you worked professionally in the foodservice industry? You've got a great mindset and a fantastic blueprint for meal prep. I'd love to meal prep with you someday, it would be such fun!
Wow! That is a high compliment! Thank you! My (Christie) education is in hospitality and tourism. It was focused on hotel management but we had to take restaurant-related courses to learn how to run a hotel. We learned front of the house, back of the house, formal dining/serving etiquette, wine pairing, etc. We learned things like mise en place and how to hold a chef's knife. Very basic. I worked in full service hotels for a few years and I loved hanging out in the kitchen during my breaks. I have a full appreciation for how hard chefs and cooks work. Sharla is a straight up foodie. She has a terrific palate and a great imagination for flavour combinations. For this reason alone, our food tastes good. I can cook but she can make a recipe! We're a pretty good team. The problem I have is #1, I really don't like to cook. #2 I am a good cook according to my husband of 46 years, so while I cook for more than one meal at a time, we enjoy leftovers. I get a break from thinking about what's for dinner, so nothing makes it to the freezer. I think I am just sick of cooking, so commercial frozen meals are so tempting. I need to turn my thinking around. I am hoping you ladies can help me change how I cook
Make your own version of commercial frozen meals. Go through the freezers at the grocery store for inspiration. If they can freeze it, you can freeze it!
Are there really people who judge you on how many freezers you own? You don’t owe anyone an explanation. Have as many as you want or need. Dismiss them.
Christie here. Great question! I definitely cook from scratch from time to time. Because the pressure is off a bit, I definitely enjoy it more than I used to. I will occasionally make freezer meals on my own for special occasions, like individual meals for my in-laws or my mom or other times when I know we're going to have company. I like to have breakfast freezer meals on hand when my kids have a bunch of friends sleepover, or if we're going to visit my brother at his cabin. It's a nice gift to bring.
Yep! And lean ground beef cooks up slightly different than regular fat ground beef. So there can be little differences, but if you measure it, at least it's consistent!

See I get messed up with the ground beef because it ends up half the size after it cooks.

My biggest mistake is flavoring stuff properly.
Sharla's really great at it but I (Christie) still prefer to follow a recipe. It's a knack. You have it or you don't! lol
I freeze mashed potatoes but it's just the potatoes I put the add ins when I warm it up.
Mashed potatoes freeze beautifully in our experience. But raw potatoes are a no-go for freezing.
Oh goodness, the Cranberry chicken dump is my absolute favorite. Sorry you don't like it.
