There are different varieties of Koshimbir like cabbage koshimbir, beetroot koshimbir, mulyachi (radish) koshimbir, carrot koshimbir, cucumber koshimbir and all of them taste yummy!     Ingredients/ Sahitya (1 cup = 200 ml)
    1 large sized (motha) tomato
    1 medium sized onion/ madhyam akaracha kanda
    1/4 cup roasted crushed peanuts/ shengdanyache jaadsar kuut
    3/4 to 1 cup beaten curd/ phetlela dahi
    1/2 tsp salt/ meeth or as per taste
    1/2 tsp sugar/ sakhar or as per taste
    chopped coriander/ kothimbir as required
    For Tadka/ Phodni sathi
    2 tsp oil/ tel
    1/4 tsp mustard seeds/ mohri
    1/4 tsp cumin seeds/ jire
    1-2 green chillies/ hirvya mirchya
    4-5 curry leaves/ kadi patta
    1/8 tsp asafoetida/ hing
