    This weeks recipe is a Keto Calzones! This is a recipe is really two recipes in one. It's a How to Make Fathead Dough recipe and then also how to make Calzones. If you divide the dough you could also make Keto Hot Pockets. Fathead dough is a very versatile keto dish that once you master it, gives your more options such as Fathead Pizza.     Just a quick tip if u add a half of tablespoon of xanthan gum and half of tablespoons of baking powder it makes a big difference it gives you that soft bread texture that pizza has love it

    Yummy! Must make. A tip I have is spray both parchment papers with avocado oil spray before putting dough in between. It comes off very easily after rolling. Thanks for your yummy and informative videos!

    You really should look into putting together a cookbook and sell it. I would buy it and it would give you an additional income to help with what I'm sure isn't cheap when you are testing recipes. I do appreciate the time and effort you take to get it right and to explain and show how to make it a little easier.

    This looks SOOO yummy! I agree with CJ about fat head dough - unfortunately it doesn’t rise but it’s still delicious! I like CJ’s choice of music for rolling dough and completing the calzone edges. 😆 Quite the video master! I can’t wait to try this - I have been craving pizza and calzones will be a great substitute! 😋❤️

    If you add 1/8 tsp of yeast, it will enhance the flavor, but doesn't cause it to rise.

    (When I roll out any sticky dough I put a tea towel under the parchment paper it helps keep paper from moving quite as much)

    I am so excited and so happy that I found you guys and this keto recipe Journey you have such fun and delicious recipes and they're pretty easy as well I'm going to try this one probably this week it's kind of ugly weather out here right now and I I need some of the Italian dressing seasoning but either way CJ you're a lucky man to have your wife making all this delicious stuff by the way if you need any more testers I'm in thank you for being so good at what you do! I do have a question I'm 63 years old and I just don't get how to write down my macros even with the card management app I have a big problem doing is there any easy way that you can help me so I can make sure that I'm getting the right total off macros the easiest like if you are explaining it to a kindergarten please if you can help me I would very much appreciate it God bless you guys!

    Aldi has a 2 carb for half a cup of sauce. It's the bigger jar with a black lid, and it is very good sauce.

    I Like it. I use a almond flour based crust to reduce the percent dairy. Also I got silicon sheets and they beat parchment paper by far.

      I enjoy silicone for cooking for baking, but prefer parchment paper for rolling. Everyone is different 🤷🏻‍♀️

    Love the idea!
    I’ve made this dish many times, to help with the sticky fall apart dough when rolling, add psyllium Powder (not husks) this will help with it binding and won’t add flavour but fibre we need... also adding nutritional yeast gives it that authentic pizza dough flavour!

    This recipe looks really tasty and I know my husband would like it. I wonder if putting the cheese in between the meat layers would keep it from disappearing into the dough? Have you tried adding baking powder to see if it would puff up a bit?

      This is the chaffles recipe I make, I add the baking powder to make it more thick. Using my mini waffle maker makes this sooo easy.

    Hi- Looks great. I have always shied away from fathead dough because the first time I tried it the egg scrambled in the heat. I will try putting the almond flour in first like you did. Love your tips and recipes.

    Turned out beautiful Sarah. Fat Head dough though is not one of my favorite things. I've tried it several times with bagels which I preferred the coconut flour ones over the almond flour bagels. I've found a pizza dough recipe though that's not actually fat head but havent tried it yet. But who knows,,I may get brave and give this a try and see if I like the dough. Thanks!!

    I have never thought of making calzone with fathead dough. Something I do when I make fathead dough is to add Italian seasoning right to the dough. It really adds taste to it. And I wonder if you added a little bit of baking powder if it would make it rise a little? But I surely want to try this.

      Yes! That’s when I add my seasonings as well… I haven’t tried baking powder my family loves calzone just as it is so I haven’t tried LOL

    I believe that’s a Stromboli. A calzone is filled with ricotta, mozzarella and parmasean mixture.

      The mixtures can be interchangeable across to every dough form. The main difference is the shape of the dough of a calzone is that of a half moon, the stromboli”s rolled dough is the shape of a rectangle.

      Hi Rena....we’ve never done a cauliflower crust, only chicken, and fathead. We enjoy both of those.

    Maybe if you put the cheese between the meat it would not absorb into the crust

      We’ve got several recipes using various methods on our blog, some have suggested yeast for flavor, but I have not tried those.

    I'm definitely going to make this for dinner tonight! To avoid it sticking to the parchment papers, I'm going to dab a bit of olive oil on the papers. I've used fathead dough before and it is very sticky.

    I love love love your channel but I have the hardest time ever hearing you ESPECIALLY when you first come on it sounds like you are whispering and then the loud music when you are finished with the introduction. Do you use a microphone? if not it would be a BIG benefit to get one so us seniors that are trying to do Keto can hear you. Seriously not complaining but informing, you talk so low.
