Looks great! But I'm confused about one thing. Are we refining cocoa butter alone for 24 hours? So the whole process takes 72 hours? My machine only works for 48 hours. How can I do in this case?
Essentially you're refining the sugar and the milk powder and allowing it to mix well with the cocoa butter. It is ultimately up to you, the chocolate maker, if you're happy with the texture/consistency of the white chocolate after 48 hours of mixing/refining.

Hi. We didn't put lecithin in our white chocolate. It's only melted cocoa butter, sugar and whole milk powder.
