    INGREDIENTS / for 35 pcs /
    • plain gluten free flour blend (240g | 2 cups) (I used Schär MIX C Pâtisserie)
    • baking powder (5g | 1 tsp)
    • xanthan gum (1.25g | 1/2 tsp) see NOTE 2
    • salt (a pinch)
    • sugar, caster (150g | 3/4 cup)
    • lemon zest (from 2 lemons, approx. 12g | 2 TBSP)
    • butter, unsalted, melted (70g | 5 TBSP)
    • vanilla extract (2.2g | 1/2 tsp)
    • eggs (2 pcs) see NOTE 3
    • lemon juice (28.8g | 2 TBSP)
    FOR COATING
    • sugar, caster or granulated (52g | 4 TBSP + 1/2 tsp)
    • sugar, powdered (43g | 5 1/2 TBSP)
    NOTES
    ------------
    1/ TBSP = tablespoon, tsp = teaspoon
    2/ Omit xanthan gum if your gluten free flour blend already contains it.
    3/ Weight of egg used in recipe is about 55g. It means that you should use M size egg in EU or L size egg in USA.
