Recipe ideas once it's ready?
I have usually mostly used it on salads, for marinating meats, and for use in Asian type cuisine in place of rice vinegar. It's a mild vinegar that is one the "sweeter" side, so it's nice to use when you want a bit of acidity, but you don't want it to be overwhelming.

How long does it take for the mother to form?
It can really depend on the temperature where you're fermenting it and how much sugar you add, but generally, it takes several weeks.

Can I use brown sugar?
Sorry. I missed this before. White sugar generally helps speed up the fermentation process (which makes it less prone to problems and can result in a stronger vinegar.)
It's probably possible to do with brown sugar, but I haven't tried it.
