@@HawaiisPickleLady Yes, I noticed that the flavor of the ginger wasn't affected, however the Vodka flavor changed a lot...not in a good way...sort of odd tasting. 🙃

Now you have me thinking of fermenting ginger to drink the ginger "ale" and cook with the salty fermented ginger. *drooling* This looks much better than the pink stuff from the store, it's more like the Ginger People brand, but yours is more colorfully yellow.
Best is the young ginger that comes out late summer and early fall. I tried it with mature ginger and it comes out pretty good. You can also shave it with a vegetable peeler to get it thin.

My method of preserving ginger is the laziest one there is. Just leave it sitting out on the counter in a little box where I keep my onions and garlic and let it sit there for months drying out and withering away into nothing, periodically cutting off little slices to flavor tea and soups and whatnot. Has never molded on me yet!
It's hard for her to cut it super thin because she's using a very thick chef knife. Instead try a very thin blade sharpened on only one side of the blade... just like the Japanese use for traditional sushi preparation.

Ginger can be preserved in a number of ways. Sometimes I put it in vinegar. Alcohol and vinegar don't really affect the taste.

I've even tried the old yellow ginger and it works fine. You can just use a vegetable peeler if the mandolin isn't available.

Pink is from food coloring and they also put chemicals. Mine is totally natural.
You could use a melon baller or just a spoon to portion out the ginger BEFORE you freeze it too! ....Or an ice cube tray...

Always use white because it's cheaper and I can't tell the difference.
I can't find the ratio vinegar / sugar / salt ... Also do you sterilize the jar before?

I sliced the ginger on a deli slicer. I was able to get large ginger, otherwise I wouldn't have done that.
