    Sohail Hashmi is one of the founding trustees of SAHMAT (The Safdar Hashmi Memorial Trust). Sohail makes documentaries, writes and blogs on issues of culture, language, education and communalism. He has conceptualised, researched, scripted and produced documentaries on Pioneers of Women's Education, lesser known freedom fighters and marginalised women. He enjoys travel, photography, food, cooking and loves to talk about all these things. He conducts heritage walks in Delhi and also writes about Delhi, its language, its food, its water bodies and its monuments.

    Excellent insights Sohail. Just one observation. The emphasis was overwhelmingly on what the Mughals did not eat. Very little on what they DID eat 😃

    Mughlai paratha is a popular Bengali street food that consists of a flatbread wrapped around or stuffed with egg, onions, pepper, and/or keema (spiced minced meat)
    I reality it’s originated from Turkish stuffed flatbread, the gozleme. The gozleme and Mughlai paratha have a similar envelope shape, but the fillings differ..brought to Calcutta by Armenian Traders

    Mughal food was rich and varied. There is a long list of different dishes given in Ain e Akbari and by Westtern travellers. There may be some changes in reipe but basic items wwere there including KKhichadi and Biryani.
