If only his hair was swept away from the sword..that's the only thing I notice from this amiibo.
They mostly try to make the amiibo perfectly match up with what the pose is in the game.

I got mine, not to use it as I see no point in amiibo’s that only work in smash, what do they even do? So mine is still boxed and has been sitting in my display cabinet since I bought it
They become sparring buddies. The more you fight against it, the more it learns your techniques. You can also go up against another person and use your amiibo against theirs. In a game like Zelda, you can use any of them to get random in game items. But the Zelda specific amiibo give you better payouts

Yes and his theme song is called One winged Angel.
In the original game he appears in, final fantasy 7, he never has just one wing. His theme is called one winged angel though. One of his boss forms in F.F 7 has several wings since, in that game, he is transforming into a godly being due to his fusion with alien cells. In later game appearances he gets given the one wing to represent his theme and that transformation and it stuck with later versions of the design. There is no real canon explanation but it most likely is just there for the reasons I said above.
This is true in the game one of his arms is a white wing but the lower half of his body is sort like a horse with wings instead of legs
It has something to do with experiments done on him before he was born, which is at least hinted at in Crisis Core. It hasn't been explained, though. Maybe the FF7 remake series will go into it, but at this point I figure it's more a design choice that doesn't have much reason other than "it looks cool/interesting."
