You've picked up a lot on the tactics since you started watching rugby but if you want an even more in depth understanding I suggest watching a channel called Squidge Rugby. He does good 10 - 15 minute breakdowns of these games.

I am French and I saw the entire match. when you say that it is the scottish who are below, the french match was a steamroller and the scottish could only suffer physically in the second half. so the French were able to play their game more easily because they were better physically

The rest weeks are necessary for player safety. Playing in an international rugby match has roughly the same impact on the human body as being hit by a car travelling at 30 miles per hour. It's incredibly taxing. If there weren't rest weeks then the chances of players getting really serious injuries would go up a lot. It's just an unavoidable reality

Scotland got suffocated over the course of the game. The 15 ending minutes was just Scotland trying to extremely solid break french line but couldn't and France punishing them. You should look the all game mate, it was quite an overall performance in Murrayfield . Second half was 90% France
At 14'30 when you say that the guy must catch the ball, do not forget that if he dives and falls he will also be alone to defend that ball... while in US football you dive, you make the catch then you still have the possession for an eventual other attemp ;)

That long pass that was knocked forward by Scotland - the passing player should have pulled the French tackler into to him as he had 3 players outside him. The long pass in wet and windy conditions are always difficult - but not impossible, to catch. The passing player was at fault to be honest.
By the way, my old man use to player for Cheltenham Rugby Club in the 1950 and he said to me that French rugby was always played at a very high tempo and when they went on tour to France many Cheltenham players were shocked at the speed of the game.
The English game is normally based on forward play of attrition. Welsh have their own style as does Ireland, Scotland and the other national teams.
