I think the watch symbolizes both Jimmy's & Gus's weaknesses for money & pride. Both Jimmy's act of dropping the watch & Gus's act of letting go of the watch symbolize their shared desire to escape being slaves to capitalism. Truly one of the scenes of all time.

I love that we're shown how hard Jimmy tries to go unnoticed and blend in with his environment while in the background we see the master of hiding in plain sight and he's purposefully indirectly shown to us for 2 weirdly long shots of Jimmy's face lol

Jimmy's a con man, he's focused on the one guy. As long as that guy doesn't notice he's being watched, Jimmy's meeting his goals as far as he's concerned. But to an observant third party, like the audience or Gus, it's very obvious that he's watching this one guy
Ironically this makes Jimmy's quick thinking with the watch kinda backfire--if Gus knows he's acting suspicious, then he'll know that Jimmy probably didn't actually lose his watch, which means Jimmy must be clever, think quick on his feet, and is probably experienced at this kind of thing. Gus gets a full read on Jimmy, without ever having to reveal himself at all, and Jimmy's too busy trying to not blow his cover that he's not even looking for anything suspicious

Yes, I understand your confusion about that. A big misconception about being "lawful" in terms of this morality system is that it doesn't mean adhering to laws as written but to one's own established sense of right and wrong which Gus does as a very orderly person with a strong tendency to do what is "right" even if it's evil or illegal as hell. "Chaotic," the opposite of lawful, is not giving a shit even if one knows it's wrong which better describes the Salamancas and Saul Goodman.

I can’t help but wonder that since his background can’t be found prior to 1986 that he may have been on Pinochet’s elite “security” guys who disappear people and coherce agreements with the regime. So when Pinochet was ousted they gave him a new identity. Because he’s so able to rise above emotion and look simply for the yes/no answer. An answer that takes deep thinking when he has no time to think yet he stays cool and aloof. Like he’s such a finely trained special guard near the top all emotions have been wiped away. His guy feelings and intuition work exceptionally well for him.

I like this scene because Gus is subtly testing out Jimmy behind his friendly guise. He says ‘if it’s in here…’ which I think is a subtle implication/warning that he better not be lying, then when he finds it he realises Jimmy is a lot smarter than he looks (given how quickly he thought to actually drop his watch in there to have an excuse to be looking in a bin).
Also when he offers to clean it in a friendly way (maybe to take it away to install a tracker?) and Jimmy politely refuses, he realises Jimmy is not a mug/too gullible. He managed to ascertain quite a bit about Jimmy’s character simply from being friendly with him.

Bravo Vince!! Jimmy and Gus, two ordinary individuals rummaging through garbage in search of valuables, can symbolize the quest for meaning in everyday life. The golden watches they are trying to retrieve represent a commonly accepted symbol of status and success. However, the fact that these watches are found in a trash bin suggests that the values and ideals we pursue can be relative and subject to change.
This scene can also be interpreted as an allegory for true existential wealth, which is often missed when we focus solely on material possessions. Jimmy and Gus, overcoming their aversion to garbage, search among it for something valuable, reflecting the human capacity to find beauty and worth in the most unlikely of places.
