    Hi, thank you for the lovely recipe. I made this yesterday with 200 ml kara coconut cream mixed with 80ml water. I reduced the sugar to 225g instead of 250g, was just nice for me. Like other users, the consistency of the kaya got pretty lumpy even though I was careful to ensure the water didn't touch the base of the pot. However, just a quick blend was required to remove the lumps. After blending, I thickened it up again as it was on the watery side. Very pleased with the results!

    Thank you so much for sharing this. This is the best instruction so far that I see. Very sincere recipe. I just made it yesterday. Taste really2 good. I think the addition of caramel at the end took out the eggy smell from Kaya.

    Thanks for the recipe. Your method is traditional. I reduce sugar to 150g, caramel sugar remained the same.
    Better than bought outside which contain alot if flour.

    Finally found the best recipe for kaya jam!
    I tried other recipe but it didn't meet my expectation.
    Sometimes it got lumpy, just use my handblender and problem solved.

      Yes, if the amount is larger, I will slow cook longer, may be 1 hr 45mins.

    I just tried it out. It was way too sweet but nevertheless was delicious. Within half an hour, i notice it was sort of cook. I added 3 tablespoon of pandan water n a bit of green colouring to make the colour stands out. Thanks for the tips about blending it in a blender if it comes out lumpy. My was lumpy within 25 mins n i took it out n blend it n it became like your texture.

      The kaya is already cooked before slow-cooking for 1 hour. Slow-cooking for 1 hour is to enhance the fragrance, cook at the lowest heat and make sure the bottom of the bowl filled with kaya doesn't touch the hot water at the bottom, don't remove the lid during this 1 hour.

      @MyKitchen101en today I made it, I adjusted the sugar portion to 160gram, 200ml kara coconut milk + 80ml water, turn out well but stil too sweet for me. I didn't control the heat temperature well so it became lumpy. No choice I used blender to blend til smooth. Thanks for sharing, it's nice 👍

      Fill the kaya into clean jars, keep refrigerated when it is completely cooled. To consume, take out the desired portion using a clean and dry spoon and return to fridge immediately. Best serve within 1 month. I used to keep longer, it still can be eaten but the taste is less fragrant.

    I add more pandan juice and cut down 50g sugar and I still find it sweet. Mine is is darker green from more pandan juice used and lumpy. I didn't add Caramel as I did not find it had eggy smell since I added more pandan juice. Is it possible to reduce sugar further?

      Try molasses or raw sugar or brown sugar or used pure fresh sugar cane juice or jaggery / real pure palm sugar or even raw 🍯... Natural non bleached sugar is okay ... Strain after first boil before steaming for an hour to remove lump ... All the best

    tks for the great video on making kaya. one of the best we have seen so far. simple and accurate in reflecting from the traditional way of making. Here are some of my thoughts
    Traditionally duck eggs are use or a combination of both duck and chicken depending on the type of texture you want to achieve. It will be interesting to experiment by adding lecithin as a binding agent for those who like to cut down on eggs.
    It is crucial to cook the coconut custard sufficiently long enough to pasteurized the custard which in many video that have been omitted.

    U using 280ml thick coconut milk.
    If I'm using thick coconut milk carton brand like Kara or Ayam Brand. Shld I use 280ml also ? Cos if for small box I think it's about 200 ml for brand like Kara..

      Yes, if not enough coconut milk, the texture will be rough. Fresh thick coconut milk without additives yields best result.

    Hi when you mentioned double-boiler method to cook kaya, meaning the water inside the pot reach the kaya bowl's bottom? Or more like the steam method?

      The bottom of the bowl doesn't touch the water, just use the steam to cook the kaya.

      Yes, blend pandan leaves with water, not remember how many pieces, may be 2-3.

    Is the inner pot inside the boiling water or just above it? I have tried using Kara coconut cream extract but the kaya is lumpy. Can advise?

      Above hot water, don't let the bottom of the pot touching the hot water. The kaya will be lumpy if It is too hot.

    Hello, May i know type of thick coconut milk you used in the recipe? As i used the one i bought from wet market calls *Santan*, it can't make the kaya thicker. Thanks

      Pandan juice is just for fragrant and colour, you can still make the kaya without it, but the eggy flavour will be stronger that some might not like.       Lucy, you can get frozen pandan leaves in most if not all the Asian grocery supermarkets in the USA. They are frozen pandan leaves from Thailand. I use them all the time and they are as good as the fresh ones.

      Net weight of grade A egg (without shell) is about 60 g, for 5 eggs just measure out 300 g (5 x 60 g).

      It is too hot. The bottom of the bowl with kaya mixture shouldn’t touch the hot water at the bottom.

      Fill the kaya into clean jars, keep refrigerated when it is completely cooled. To consume, take out the desired portion using a clean and dry spoon and return to fridge immediately. I usually finish within 1 month.

    Is thick coconut milk the same as coconut cream? Can I use castor sugar to replace fine sugar?

      Pandan leaf is quite common in South East Asia. en.wikipedia.org/wiki/Pandanus_amaryllifolius
      You may make the kaya without it, it is just for fragrant and colour, or you may make the caramel version kaya in another recipe: mykitchen101en.com/kuih-pulut-tekanpulut-tai-tai-pressed-glutinous-rice-caramel-kaya/

      The main ingredients for kaya are eggs, sugar and coconut milk, pandan leaf is just for fragrant and colour.

      Water from condensation will drip into the kaya if you didn't tie the lid with cloth, unless you use a bamboo lid.

      Do you add Pandan? Pandan should help overcoming the smell.

      Use medium heat first, when the mixture starts to thicken, turn to medium-low heat and cook until thickened.

      If it is not thick enough after 1 hour, then stir over medium-low heat again for a while, it will thicken.

      You may try mixing 3 tbsps. of sugar with 1 tbsp. of hot water until dissolved, then sieve into the kaya, this is the idea shared by a young Facebook fan and her kaya turned out great.

      The bottom of the bowl with kaya shouldn’t touch the hot water at the bottom. Turn to low heat immediately and cover with lid. Whisk the kaya using a balloon whisk until the kaya is smooth.
