Since in drums you woud play the hi-hat with the dominant hand, I would try to translate that to the cajon and play any add-ons with the right hand. For me, it applies to shakers, sonaja (a little hi-hat I bought for my cajon), tambourines and cowbells. I mean, auxiliary percussion with the right hand and the cajon itself with the left one. Takes some practice, though.
If you're right handed and you're used to using the right hand for your high-hat and left for the snare, you would have it on the opposite side of what's shown on the video.
