In our twelfth installment of Quarantine & Cook we make the most amazing and delicious cheesecake in a jar. Oreo, strawberry and blackberry.
Ingredients
1-2 Pack Graham Crackers
16oz Cream Cheese
Half Lemon Zested
16-20 Oreo Cookies
1 Stick Butter
2 Tbsp Vanilla Extract
2/3 Cups Sugar
16-20 oz Strawberries
8oz Blackberries (Optional)
Heavy Cream
1/2 tsp Nutmeg
1/4 Cup Water

Nutmeg is a spice with a nutty aroma. At the quantity for this recipe you shouldn’t taste it at all.

Thank you. The black Hamilton mixer was purchased on Amazon, Walmart may also have that one or a similar one. Cuisinart is a good brand also.

How long can these treats stay fresh?How many days to be exact?
I’d say 3 days max - freshness isn’t guaranteed much after that
could you freeze these jars as is and ship them?
Yes that’s definitely possible.
As long as you put them on dry ice
Will the cheesecake part set up if it sits overnite
It will get a tad bit more firm in the fridge but it isn’t a cooked recipe so it won’t firm up like a baked cheesecake.

The jars I had were 16oz
How many oreo cookies do you use?
About 16-20 Oreo Cookies
How long can you keep it?
I’d say up to 3 days- after that it starts going downhill.

How many does the recipe yield?
This recipe yields 40 oz - I used two 16oz Mason Jars which can serve up to two people and one 8oz Ramekin which would be good for one person.
What if I don’t have whipping cream can I use whole milk instead?
Hi Shannis that’s a great question. To substitute for 1 cup (237 mL) of heavy cream, combine 7/8 cup (232 grams) of half-and-half with 1/8 cup (29 grams) of melted butter.
This substitute works in virtually any recipe, including those that require whipping. Whole milk wouldn’t work for this recipe as a replacement.
Why the lemon zest?
It brings out the flavor and it adds just a little citrus so it's not just sugar and vanilla extract flavoring the cheesecake.

I tried this recipe and my mixture isn't thick like yours but it takes like 4 hours to firm up

Sometimes over mixing or too much of the cane sugar can cause a more loose consistency, you can always stop mixing after each ingredient is combined instead of leaving the mixer on the entire time.
