Making Ang Chiu / Ang Chew or Hong Zhao (Red Yeast Rice Wine / Chinese cooking red rice wine)

- This is a recipe that our family have been making at home for many years and always turn out great.
Ang chew or ang chiu, also known as Chinese cooking red wine is usually used in cooking, not for drinking. It goes by other name too: Hong Zhao or Red Yeast Rice Wine
The red colour comes from the red yeast rice. Mixed with chiu piah or wine cookies, it ferments the cooked glutinous rice, changing it from solids to liquid. No water is added at all.
We always have a bowl of mee sua with the soup made with chicken, mushroom and ginger, plus with the star ingredient, the ang chew.
We share this video to show you how it is done (and to keep this tradition alive).
Please like and share the video if you enjoy watching it.
We also love to hear stories from you on ang chew if you have any.

How about using basmati rice ? isnt it still the same ?
Thank you for sharing ❤️❤️❤️
Thanks for sharing. How much glutinous rice, chiu piah and red yeast rice needed? Mind sharing the recipe? Thanks
Thank you for watching!
Mostly estimation on the ingredients because we are making a small batch for home use. 😅
Glutinous rice maybe around 1 small bag of 1kg, with a bit of yeast rice (a handful might be around 100 or 200g) and chiu piah depends on the shop but usually we get in few round pieces, roughly around 5 pieces or roughly 50g+
Good luck and let us know how it turns out!
@@CornucopiaWorld Thank you so much for taking the time to reply. I appreciate ❤
Maybe 2caps rice +0.9caps water to cook ,maybe better
Hi thanks for this video. I am unable to find yeast cake. Can i substitute it with bread making yeast? Like instant yeast?
Thanks for watching. Glad to share.
Unfortunately, using baker's yeast doesn't yield same result. Might be due to the type of yeast that is meant for baked goods, rather than used to produce fermented beverages like brewer's yeast.
I haven't experiment with brewer's yeast yet... 😅
I usually buy the jiu piah online if I can't get from the shop. Hope this helps.
