I watched this cool video with Italian Americans talking about the food culture in America. These cooks are from NYC and they don't have any problem with using delicious, different ingredients in their food. They actually consider themselves Americans of Italian descent.
Pistachio on the pizza. Never really thought about it. I think I does make sense. Gooey, creamy, smoky, crispy, “light” and nutty. Combing flavours with texture 😮. This guy is a genius.

@@robdenaro4215 What is authentic anyway? I see loads of Italian chefs arguing among themselves as to what is authentic between themselves. The only pizza I know that is common and considered authentic is the one with basil, tomato and mozzarella. I don't like mozzarella as it is a bland cheese. I was offered another cheese. Besides there is no such thing as authentic, just common ingredients. You can go to Sicily and they may pretty much use the same ingredients in some of their dishes as they are local and fresh, but each family prepares the same meal using these ingredients differently, they add their own touch. Ingredients can be authentic but the dish is an individual thing.
@@51Saffron . Those who operate at higher levels know the authentic recipes. In contrast, less knowledgeable cooks, such as amateur chefs, home cooks, etc, often bastardise authentic recipes. The city of Bologna takes food culture and history seriously. A large collection of written authentic recipes are kept in that city's Chamber of Commerce, under lock and key. They may be perused upon request. Go to Bolonga and ask for spaghetti bolagnese, and see what response you get. As for chefs, even Italian chefs, there are competent ones, as well as incompetent ones.
Pizza is great with your bAsic 5 meats and 5 cheeses. Why do people need to break new ground for the Starbucks crowd. Rather eat a 4 meat tombstone grocery store pizza than this crap anyday. Not to mention this crap he threw together probably costs $20 or more a pizza. C'mon man...no way
