    Hey! Good to see you back.. I was wondering where you had gone :) I have bought daikon's in the past but wrapped wedges of them in phyllo pastry and baked them. I love radishes in general and think I will try this! Thank you for the video! .. OH BTW.. the video seems really jerky for some reason.... Also nice to see your hair down! See you in the next one :)

    I don’t think you mentioned to peel the daikon
    Also, if you chooses a daikon that is really large just under the stem can you use a slice to cover the top?

      That might work to use a large slice to cover the top! I haven't done that but I prefer to keep things submerged with a non food item or in the case that it's a quick ferment and I'll be tending to it a lot, I'll leave it alone. I do peel the radish before pickling!

    I can't find daikon's locally! There was a booth at the farmer's market once with funky radishes like watermelon radish, but never daikon. Do you have to get it from like a Trader Joe's or Wholefoods? We don't have them within a reasonable driving distance. OK, and I have to ask you a weird question... by any chance did you live in Florida as a kid? You remind me SO much of someone I used to know there.

      That's interesting you can't find them. I'm sure whole foods would sell them or if you have a food Coop, they might or be able to get them. The farmers markets is my other go-to suggestion, but you mentioned that one already. Never lived in FL nope 😂

      @@thecitysteadkitchen No food coops, however there are a few CSAs that would likely have them... but we have our own garden so it wouldn't pay to do that. I'll have to decide if I want to dedicate space in the garden for something that I don't know if we will like it or not, unless I can find one somewhere to try. The area I live in is pretty rural, so places like Whole Foods are at least an hour away. And I had a feeling you weren't the person I thought you might be, but you probably have a doppleganger wandering around central FL! 😅

      Yes that would have been helpful. I try to respect the authors work of the book I work out of. Unlike Canning recipes which can be found as an industry standard, The Joy of Pickling was put together by an individual. It was 1.5 T
