I make the Vegan version of the Ashe Anar by just eliminating meat, and adding some good vegetable stock to the ashe. I am Iranian so I assure you that the taste will be authentic.
If you like the texture of ground beef, you could try a vegetarian "ground meat" (made from soy) available from the Yves brand that I use for replacing ground beef, which is quite good.
No. Aash Anar is a traditional dish from the province of Hamedan in Iran; but it is much less known to the rest of us Iranians. I once received a big bowl of this as a house-warming favor from a Hamedani neighbor of ours, and it was absolutely delicious.

I use Bob’s red mill TVP as a meat replacement, it’s great in soups
