Recipe:
4 cups stale or leftover cake 1 cup confectioners sugar
½ pack cream cheese 1 tsp vanilla
¼ cup butter or margarine 2 cups chocolate chips
Method:
In a bowl with a mixer make your cream cheese icing, add cream cheese, confectioners sugar, butter and vanilla. Mix together until creamy.
Now in a blender of food processor grate the stale cake, you will need about four cups. You can use any type of cake or loaf. Leftover christmas cake, birthday cake, banana loaf or pound cake. :)
After you grated the cake add to the bowl of icing and blend together with a mixer or by hand. When mixed, if firm make small cake balls or if soft put in the fridge for one hour to set.
Add water to a saucepan about quarter full. Place on the stovetop on a medium heat then place a heat proof glass bowl on top and add chocolate chips. This is called a double boiler method. Let slowly melt stirring occasionally.
You can also melt the chocolate chips in a bowl in a microwave for a few minutes, don’t over cook.
After make the cake pops the size you would like. Then dip in the chocolate one at a time. Place on a plate with a sheet of parchment paper.
Continue doing this until all done.
Roll in coconut, candies, sprinkles or topping of choice.
You can put a toothpick or lolly pop stick in each one before serving or keep on the try like they are.
Bonita’s Tips:
You can make a cake of choice and after at room temp grate in small pieces.
You can use store bought cake and icing if you wish.
You can also use dark semi-sweet chocolate or leave it out.
