There should have been a few bridging experiments - the various two-meat burgers (let's stick with beef mixes - beef + pork, beef + lamb, beef + chicken, beef + tuna). I'm certain beef/tuna was the culprit, but I'd have liked to see your thoughts on beef/pork, beef/lamb, and beef/chicken burgers.
I used to do this pretty often with a blend of beef, ground turkey, and spicy pork sausage. With the right blend it's actually quite amazing. Super tender and juicy. I tried adding chicken once, wasn't a fan.

Pork and beef makes a good burger and generally those meats compliment each other in a lot of dishes. My Japanese friend always makes his gyoza like that and I always use his recipe now. I think the fish and chicken definitely mix up the flavour a bit too much, like adding too many different seasonings. I might try the chicken and tuna combo, I can imagine it's similar to crocodile which is a meat I'd highly recommend trying; it seems tough when you cut it, but falls apart when you start to chew it and does taste somewhere in between fish and chicken.
