The gummi stone will remove any burrs left by the diamond stones. Just use lightly on the base/edge at a 90 degree angle. Use at a 45 degree angle to detune tip and tail.
You can tell he never used that file/stone holder. I own it and the screw knob to tighten the hold is backwards - righty loosey lefty tighty. You can see him struggle with it and they even cut out a part.

The file has the capability to set the base and side edge. Standard for most people is 89 for base and 88 for side. You are correct that he doesn't show the side edge being done - its video magic. :)

That file only sharpens the side edge, not the base edge. He kinda acts like it does both
