I do mine by frying some bacon In the pot first. Then adding the onions and cooking those for a bit. Then broth, smoked turkey legs or necks, salt, pepper, garlic powder, mustard powder, paprika, red pepper flakes, franks red hot, red wine vinegar, lemon juice, and brown sugar. We not too far off so I’m gonna have to give this recipe a try and taste the difference.

Collards taste good with the stems in them, just roll and cut into bite sized pieces. Unsure why so many people eliminate the stems it’s part of the greens , yes they have a bitter taste but that’s why I add a little sugar. We usually clean the leaves before cutting them also. It’s all about how you prepare and what you add in for flavor ( smoked Turkey wings, smoked turkey neck, beef neck bones or ham hocks ect). Need that glorious pot liquor! 😃🙌🏾If someone is a vegan/vegetarian can sauté with onions, peppers , garlic, season to taste still delicious! 🤤 😊

I have to make dinner for our fire house on Thursday night for 20 people. I'm doing a Cajun spice fried chicken, baked mac and cheese, and adding this to the menu! Thanks. I'll be checking out that cookbook!

I don't put sugar in my greens. Instead, I use Kale & Collards together. I also like to use smoked turkey butts. Thanks for the suggestion of the salt free Tony Cs. I'll have to try that as I typically use Lawry's season salt.

I know king-but I buy prefer tha’ bags.
You right they full of ‘knuckles and stems’ but the Collard bunches are so dang sparse now and STILL cost a ‘grip’ for so little.
I get tha’ giant bags $5.99 here and I turn on me a good t.v watch and pick em’ out. I’m still left with a good amount.
You seem to get more Mustards in tha’ bunches though so I DO buy about 3 of those to add to my Collards as I don’t prefer strait Collards.
No sugar but I do use a tsp. of baking soda. My Alabama hailing daddy (RIP) taught me that.
His greens (and he did used strait Collards) were tha’ stuff dreams are made of. Legendary. He didn’t tell my momma that secret till years later.
Yours look 🔥. I’m 57 so I been around a few stoves and kitchens so imma great cook an baker.
Got a lotta cookbooks but Immo get yours. Another one can’t hurt-you know…see what’s crackin’ in it. 😊
You know. Support my young brother.
GOD Bless your business endeavor and talent.

I sometimes do a combination of mustard greens with my collards. Smoked Turkey neck bones cooked until the meat falls off by itself.
