    Prep. Time 40 minutes
    Serves 4 people
    Ingredients:
    1 kg white fish (any salt or freshwater fish) cut and clean
    - for marination
    salt to taste
    1 tsp turmeric powder
    1 tbsp cooking oil
    1 tbsp mustard seeds
    1 tsp cumin seeds
    10 curry leaves
    3 dry cherry peppers
    5 dry chilies
    3 medium onions chopped
    1 tbsp ginger paste
    1 tbsp garlic paste
    1 tbsp coconut powder.
    1 tsp turmeric powder
    1 tbsp Kashmiri red chili powder
    1 tsp red chili powder
    1 tbsp coriander powder
    1 tsp cumin powder
    water as required
    3 medium tomatoes chopped
    salt to taste
    1 tbsp tamarind paste
    dry kokum (to your taste)
    3 green chilies slit
    1 tsp black pepper
    1 tsp garam masala powder
    fresh coriander chopped
    Method:
    - Take a white fish or any as your preference. Clean and cut into pieces. In a bowl marinate the fish with salt and turmeric powder. Marinate the fish well and keep them in the refrigerator for
    30 minutes.
    - Take a pan, when the pan is hot, add cooking oil. Add mustard seeds, cumin seeds, curry leaves, dry cherry peppers and dry chilies. Please make sure the flame is low and don't burn them.
    - Add finely chopped onions, and saute them for 10 minutes on medium flame. Saute the onion till the onions are light golden brown.
    - When the onions are golden brown, add ginger and garlic paste. Saute and fry the ginger & garlic with the onions. Cook the ginger & garlic for 5 minutes.
    - Add coconut powder and saute it. At this point make your flame low, so that you don't burn the coconut.
    - Once the coconut is nicely browned add turmeric powder, Kashmiri red chili powder, red chili powder, coriander powder and cumin powder. Add all powdered spices, and saute well for 5 minutes.
    - When your spices are nicely roasted, at this point add little water so that the spices don't burn. Mix well the masala.
    - Now add chopped tomatoes and cook the tomatoes for 10 minutes. Add salt at this point. Salt will help the tomatoes to cook fast. Cover and cook the masala for 10 minutes on a low flame.
    After 10 minutes open the lid and give the masala a good mix.
    - When the tomatoes are cooked, now is the time to add your souring ingredients (agents). Add tamarind paste and kokum to the masala, and mix well. You can add according to your preference. Mix well.
    - Add fresh green chillies, black pepper and garam masala powder. Mix well with the masala. Add water according to your preference, and how thin you want your gravy. Mix well and cook for 5 minutes.
    - Add freshly chopped coriander leaves. If you want you can add more water to your masala before you add fish.
    - Add your marinated fish to the masala. Coat your fish with the masala. Make sure both the sides of fish are covered with the masala. Cover the fish and cook the fish for 10 minutes on low flame. After 10 minutes open the lid. Now turn over your fish
    and cook the fish on the other side. Cook the fish for more than 5 minutes.
    - Garnish with freshly chopped coriander leaves.
    - Dhaba Fish Masala is Ready.
    - Serve with steamed rice, roti, or chapati.
