A few local cacao learning centers in my area recommend harvesting when the pods are 40% - 85% ripe. I don't understand why when fully ripe, not overripe, wouldn't be best and how 40% can be good. What you say?
Harvesting at peak ripeness is best, in our opinion, so long as you’re cracking and fermenting same day or very shortly after.
The sound of the machete hitting the cacao pod and that satisfying crunch when he twists it open is like ASMR!

I've enjoyed eating the white pulp (around the beans) of freshly harvested cacao. Do other people commonly eat it? Any products made from it?
