    AKA.. Yellow grits, Cou Cou, and Polenta.
    For some reason ppl don’t realize it’s the same thing just different Nationalities and their style of making it. Just thought I put that out there. 🇭🇹

      The first time I cooked polenta was in culinary school. My first thought was this taste like cornmeal! Until, we researched the differences! There is a slight difference between polenta and cornmeal. Polenta is most typically made from a variety of corn called eight-row flint. The flint corn use is different then the corn used for cornmeal. It’s also milled differently from cornmeal. You can use Cornmeal or polenta interchangeably, depending on the dish your making.

      Oh really, it looks so similar. It looks like the fine corneal or medium coarse cornmeal when I see the Italians making it.

    You are definitely changing the game with your Haitian recipes! I grew up eating Mayi Moulin but this recipe right here!!!! Is a hit!!I’m buying the ingredients this weekend. Question: did you buy the callalou frozen?

      No, I freeze it! Keep in mind this is not the Haitian kalalou (okra), it is called Amaranth-Green Leaf but Jamaican call it Callaloo.

    love the recipe! Could you include some measurements tho, like for example how many cups of cornmeal you use per cup of water? I also have trouble knowing how much water to add to get the right consistency

      I don’t use measurements but you can use 2 cups of cornmeal and 7 to 7 1/2 cups of water . Remember once 75% of the liquid evaporate, turn stove temperature down to a number 2, let cornmeal cook until done. I hope this helps!

      Most Haitian people dont do measurements but when you doing Mayi Moulin you need more water than corn meal. If its too chunky put more water until it gets to how you like it

      I eyeball my ingredients, typically it’s 3 to 4cups of water to 1 cup of cornmeal.

    You said for cornmeal you would use 1-to-2 ratio, did you mean 1-to-3 or 1-to-4 ratio since cornmeal needs more water ??
    By the way, I love your videos.

      Thanks for watching! Yes, I meant 1 to 3 but it’s a rough estimate, because I eyeball everything.
