- SWEET POTATO LEAVES IN COCONUT MILK
Recipe by Su’s Cookbook ❤️
Ingredients:
500gm of sweet potato leaves
500-550ml thick coconut milk
Anchovy/Ikan bilis stock powder
1 tsp turmeric powder
1 tsp palm sugar (optional)
Red chilli slices for garnishing
Salt to taste
Oil for cooking
Coarsely dry blend these ingredients:
Or you may use a mortar-pestle to pound:
Handful of cleaned ikan bilis/anchovies
2-3 fresh red chillies
2-3 red cili padi
3 cloves of garlic (crush before blending)
P/S: You can chop the stems & keep them separately.
Steps:
First heat up a little oil in a wok/pan.
Sauté the pounded/dry blended ingredients and stems for 1-2 minutes.
Now, add in the coconut milk. Add in some salt, stock & turmeric powder. When it starts to boil, add in the sugar, potatoes leaves and allow it to cook for 3-4 minutes over medium-high flame.
Taste for seasoning. Turn off the heat.
Garnish with red chillies and enjoy this awesome simple comfort food with rice!
