You beat me to it. Touch of lime juice, along with some poblano pepper powder, and ancho chili pepper powder. I'd even add some finely chopped cilantro to it too.

CrazyCatLady78 First off ive never heard of cojita cheese in my life, you mean COTIJA? I live in Mexico all they use is cotija cheese and limon mayo. Nothing wrong with how he made his at least he added some spices.
