Had he said that to a judge in masterchef US, he would be made fun of in 0,001 seconds by the judges. Except Graham Elliot, he's my favorite judge from MC US, since he actually gives constructive criticism without bashing the contestants.
The point of MasterChef is to take home cooks and push them into the territory of fine dining/professional cooking. Because of this, the home cooks have to be exceptional in the competition, and go out of their comfort zone. The reason why the food was scrutinized was because if you want to be in MasterChef, you need to cook like one, while not having the highest skills.

A vast majority of chefs agree that medium rare is the way to go to bringing out the most flavor in the meat. This is because the meat doesnt become dry (a common problem with well done dishes), filled with juices, makes a amazing golden crust that is easy to manage with the temperature with the meat inside, and many steak seasonings like rosemary (which is very strong) needs to have the meat preserve its own strong flavor so the rosemary doesnt overpower it, it also keeps the meat tender (as the muscles start to cook the more they start to contract and stiffen up) and unlike rare the middle is warm and is a less likely to give you a a meat disease (which only really occurs in people with pre existing blood diseases or with badly contained food).
