    Ingredients:
    Coriander leaves: 3 cups (stems removed, washed, and dried)
    Besan (gram flour): 120 grams
    Rice flour: 1/4 cup
    Sesame seeds: 1 1/2 tbsp
    Green chilies: 3, finely chopped
    Hing (asafoetida): 1 tsp
    Turmeric powder: 1 tsp
    Red chili powder: 1 tsp
    Cumin powder: 1 tsp
    Sugar: 1 tbsp
    Lime juice: 1 tbsp
    Garam masala: 1 tsp
    Cooking soda: 1/8 tsp
    Salt: 1 tsp
    Oil: 1 tbsp (plus extra for greasing and frying)
    Water: 50 ml + 1 tbsp
    Method:
    1. Prepare Coriander Leaves:
    Remove the stems from the coriander leaves.
    Wash the leaves thoroughly and pat them dry using a Turkish towel.
    2. Prepare the Dough:
    On a flat plate, spread the coriander leaves evenly.
    Sprinkle the besan, rice flour, sesame seeds, chopped green chilies, hing, turmeric powder, red chili powder, cumin powder, sugar, lime juice, garam masala, cooking soda, and salt over the coriander leaves.
    Drizzle 1 tablespoon of oil over the mixture.
    Gradually add 50 ml + 1 tablespoon of water, mixing gently, until a dough forms. The dough should be thick enough to hold its shape but not too dry.
    3. Shape the Vadis:
    Shape the dough into square or cylindrical rolls, as desired.
    Grease a steamer tray or plate with oil and place the rolls on it.
    4. Steam the Vadis:
    Heat a steamer and bring the water to a boil.
    Place the steamer tray or plate with the rolls into the steamer.
    Steam on high flame for 12 to 15 minutes.
    Check for doneness by inserting a knife; if it comes out clean, the vadis are done.
    5. Cool and Cut:
    Allow the steamed vadis to cool completely.
    Once cooled, cut them into round slices, not too thick or too thin.
    6. Fry the Vadis:
    Heat a tava (griddle) and add a little oil.
    Place the cut vadis on the tava and fry them until they are crispy and golden brown on both sides.
    7. Serve:
    Serve the crispy Kothimbir Vadis hot with your choice of chutney.
