Enjoyed your video and ideas. My parents grew up in Jersey City during the Great Depression. Mom's Dad would tell them to always eat a good breakfast because you never know where your next meal is coming from. And Mom's Mom, Nana, would make frizzled beef. I now know the butcher probably gave the bone to Nana. I never knew exactly what it was, but now I have a better idea what it is. Mom described Nana scraping the meat off the bone to make it. I'm still not sure exactly what it is, but it makes more sense. Thanks

I had a dear neighbor, friend, and mentor named Mary...she passed a few years back.. You Mary - have the same wealth of knowledge she had. Thank you for having the desire to teach us, sharing what you have. What a blessing you are. May God fill your cup pressed down and overflowing. Do not get weary. Thankful for this avenue to know you...but cannot help but wish you lived just down my very rural gravel road.

Thanks for the tips. Instead of going out for ingredients today, I made some meatballs with minced beef and lots of wrinkly veg (celery, carrot and shallot), some potato wedges with some very small potatoes that were starting to sprout and a “bottom of the fridge” salad with tomatoes, cucumber, red cabbage and some more wrinkly carrots! All was delicious and I didn’t have to leave the house.

Thank you for bringing this forward, Mary.
I've saved my vegetable trimmings for years. When I have about 3 quart bags in the freezer, I make broth or the start of soup. We lovingly and laughingly called it garbage soup. 😆 It's the best soup starter. And even after those veggies are cooked beyond recognition, they then go in the compost. Win, win, win!
Great minds think alike. 🙂 I went back for seeds for a fall planting and there were none! It was both 😖 and 👍 (happy people were planting). I was able to get some varieties I hadn't tried before so it all worked out. Nothing tastes better than what comes out of your own garden.

When I was a kid we we pretty poor. Our family of six would get two meals out of one chicken. We always saved the bones to make soup the next day. We always had tons of potatoes and onions cuz they could be bought in bulk very cheap or grown in our garden for even cheaper. They were vegetables the rabbits wouldn’t eat. Lol. Our family were consummate composters. We always had a garden, even if we just grew a few simple things. Composting is great for gardens in pots. I had two huge pots. One for the food scraps and one for potting soil or spent soil from the previous years pots. I’d put food scraps in the pot and cover with soil and then cover the food scrap pot with a lid. Very easy. If you have bokashi bran it speeds up the decomposition and keeps the smell down. Thanks for all your suggestions. Although I grew up on home grown food and not processed(Our family did a lot of canning), I’ve learned a lot of good things from you. Thanks for all your posts. You are very instructive. I’m trying out making my first loaf of yeast water bread today.

My great grandmom who also lived through the depression and kept everyone fed with her tiny garden used to add a splash of white vinegar to bone broth. She taught me as a little child. She said the vinegar helped pull the calcium out of the bones and into the broth? I'm not sure if that's true but I still do it lol.

Hi Karin, Thanks so much for sharing your sweet childhood memory. I love things like that. Yes, I always like to add some sort of acid to my bone broth. It does help leach out the calcium plus the collagen from the bones. Our local grocery store deli sells dark meat fried chicken, 8 pieces for $4.49. I can't buy a chicken and fry it for that. So it is a once a week quick supper. Cut the meat off the bones and pressure the bones with saved goodies and the seasoning on the gristles and odd bits makes its own soup ☺️

as much as I dislike what the "time" has brought upon us, as much do I enjoy all the extra time: made 2 jugs of dandelion wine, 3 jars of vinegar are sitting and waiting patiently to get stirred every day LOL, trying another sour dough starter, baked bread and engl. muffins (actually, I shaped them long ways to put out hot dogs in, topped with red cabbage and springweed pesto); getting the house cleaned out.... too bad the thrift store is closed to drop items off. So I am really running behind in all my favorite videos here, always nice to see what you are up to! Thank you, Mary!

Thank you Mary, another thing people have forgotten since the the 1940s, is to fill an oven when it’s on. In the 50s I could bake pies and tarts on a Saturday morning as the oven was one for other cooking. Boiling or steaming potatoes...do enough so left overs become a nutritious low glycaemic potato salad. Or others. Put in oven with other baking to turn into jacket potatoes, Our refrigerators are so good it’s easier. Simple things, always have a good drink before ...half an hour before leaving the home as there was no money to buy drinks out there. Right now I have rice soaking from last night, red lentils and adzuki beans. Soaking reduces the phytic acid so they don’t interfere with nutrient absorption and they cook far more quickly even in my pressure cooker.

Still having some shortages in our one little grocery store. Flour and yeast seem to be the biggest problem. People aren't snatching things like bread and eggs up the second they hit the shelves now, but choice isn't what it was. There are limits on some things. A lady on line and I were researching homemade pectin, since she can't get it right now. Home skills are more valuable than they have been in a long while.

As well as saving vegetable scrapes, do fruit peels, stems from herbs and then the stuff freezer bags. The stuff bags are where I put ends of bread loaves and bread products for bread crumbs or just as a soup thickener. The bits of meats that are not enough to make anything out of all get added to 1 bag. Those I use when making bone broth to add flavor, or as toppings for pizzas. soups you name it. If you have a small freezer remember you can dehydrate all these things as well and save them that way. Take care everyone.

Love this video. I too try to have a no waste kitchen. I use the broth from cooking any kind of meat in the slow cooker. I remove the fat after it cools in the fridge and use it to cook dry beans after soaking. I also cook other veggies in it. Surplus I freeze. Cabbage leaves and the core from broccoli and cauliflower I save and use in my blender with protein drinks. The fiber I really need. Love your videos and admire you a lot. God bless

Hi Mary. Thank you for your videos. They are fun and informative. I’ve used a number of your recipes with great success (last one was your fermented mustard which turned out quite spicy and really good). One question: how do you go about cleaning the onion skins? I don’t keep the outer skin and the section with the root. Do you have any tips? Thank you

We're all doing well. We aren't on a lockdown so we can still go to the stores that are still open. The other day Daniel and web out to get more soy sauce as we ran out of it the previous night. I've been working on my new binder. Nearly done rewriting the video game calender section on sturdier paper. It's on the short side. The video game strategy, general notes, and dream journal sections are much longer. The sturdier dividers work much better. Think I might add a clipboard since the cover of the binder is pebbles and gives my writing that appearance. For now I'm using another binder that has a smooth cover as a make shift writing desk. The seal on our refrigerator door was coming off and a corner of the metal bed base slumped. For some reason that leg of it won't stay upright like the other three. For now we taped the seal and placed a small cooler to prop up that corner of the bed. Think I'll get another bed base. Have my eye on a metal one that is higher for underneath cleaning or storage and has many positive reviews from heavy people as that should withstand Daniel who is nearly 12 years old and 90 lbs from breaking it when he enthusiastically is jumping on it. We got him an indoor trampoline but he still prefers jumping on the beds. Then again that might be painful if our feet or legs get in contact with the metal legs. I guess I could always put a buffer like pool noodles on them. Maybe I should save for a real wood one.
