    Ingredients for 25 - 30 rolls:
    Cook pork & shrimps:
    2.2 lbs = 975 gr pork loin cut to 4 pieces, 1-1/2 in thickness.
    2 lbs large shrimp peeled, deveined = 50 shrimps
    9 cups water
    5 large shallots
    1-1/2 Tbsp sugar
    1 Tbsp kosher salt. Reduce the amount of salt if using table salt.
    Cook rice noodles:
    16 cups water
    6-7 oz rice - vermicelli noodles (Oldman Quehuong Brand)
    * Bring 16 cups of water to boil then add noodles, turn the heat off. Stir to loosen the noodles a little, then cover, timer for 8 mins. Eight mins cooking time (soaking time) is used for this brand of the noodles, in my opinion this noodles are pretty big. If you are using another noodle brand then, please adjust the soaking time. The best way to tell the doneness of your noodles is to taste it.
    * Drain out the noodles then rinse with hot water until the water runs clear, then shake off all excess water. Why rinse your noodles with hot water? The answer is hot water keeps your noodles hot and when you place it back into it's warm pot and cover it, the heat from the noodles will help to evaporate all of it moister, making your noodles dry and less sticky. I recommend to keep the noodles warm in it's pot for 10-15 mins before serving.
    Make sauce:
    1-1/2 cups water
    1/2 cup creamy or crunchy peanut butter.
    3/4 cup to 1 cup hoisin sauce (Lee Kum Kee)
    1 Tbsp white vinegar
    Lastly:
    2 heads leafy lettuce, washed.
    All sorts of fresh herbs of your choices.
    Garlic chives
    1 package of rice papers.
    1 cup crushed toasted peanuts.
    Sriracha hot sauce.

    Nguyên liệu cho 25-30 cuốn:
    Phần thịt, tôm:
    2.2 pound = 975 gr thịt thăn heo hay có thể dùng ba rọi, thịt đùi. Cắt dày khoảng 1-1/2 in.
    2 pound tôm lớn = 50 con đã lột vỏ và rút chỉ đen.
    9 cúp nước
    5 củ hành tím
    1-1/2 Tbsp đường
    1 Tbsp muối biển ( nếu dùng muối bọt bình thường thì phải bớt lại ).
    Cách luộc bún:
    16 cúp nước
    6-7 oz bún hiệu Ông Già Quê Hương
    * Nấu 16 cúp nước thật sôi rồi cho bún vào tắt bếp. Dùng đũa gỡ bún rời ra tí xíu và nhớ đậy nắp lại, sau đó ngâm bún trong nồi 8 phút. Mình ngâm 8 phút là cho hiệu bún Ông già này, nếu các bạn dùng bún sợi nhỏ hơn thì phải giảm thời gian ngâm lại. Cách tốt nhất là ăn thử để đảm bảo độ chín mềm của bún.
    * Khi bún đã đạt được độ mềm thì đổ bún ra rổ và xả sạch bún với nước nóng và nhớ lắc cho ráo bún. Tại sao phải xả bún với nước nóng? Bởi vì nước nóng giữ cho bún nóng và khi bạn cho bún trở lại nồi đậy nắp lại thì độ nóng của bún sẽ giúp phần nước còn lại trong bún bốc hơi đi giúp cho sợi bún khô ráo. Nên giữ bún trong nồi từ 10-15' trước khi ăn thì bún sẽ khô, ráo và dẻo.
    Nước chấm:
    1-1/2 cúp nước
    1/2 cúp bơ đậu phộng
    3/4 cup hay 1 cúp tương đen (Hoisin sauce- Lee Kum Kee)
    1 Tbsp giấm trắng
    Phần còn lại:
    2 bó xà lách rửa sạch
    Rau thơm tự chọn
    1 lb hẹ
    1 gói bánh tráng
    1 cúp đậu phộng rang giả sơ
    Sriracha tương ớt

    Cach lam cua Beth rat gon va nhanh . Goi cuon cua ban rat dep , rieng cua toi thi de chung 15 phut la bi be nut te tua . Phai cuon lai vat va lam , phai lot them mot phan tu cai banh trang de tranh bi be nut . Luoc bun theo cach cua ban thi rat thanh cong , cam on ban nhieu lam !

      Notice how Beth just dips the rice paper in and out of the hot water. The paper is not too wet, and that's how you can make the rolls right without the paper ripping. I've noticed on other channels, they really soak the paper too long and they wind up with tears and breaks even before they begin to roll.

    Hi Beth. Thank you for a very detailed recipe. I love Vietnamese rolls and all Vietnamese food in fact. I just wish you would have told us the names of all those greens you picked from your garden. Lettuce I know, and I believe mint and coriander are another one of the greens but what else?     hi Beth I like you explain so I clearly understand meaning you post ingredient:
    1-1/2 cup water mean 1 plus 1/2 cup .
    3/4-1 cup hoisin sauce mean 3/4 cup plus 1 cup. or from 3/4 to 1 cup
    please respond because I'm confused thanks

      3/4 - 1 cup of hoisin sauce mean you could use form 3/4 cup to 1 cup. :-)

    Great recipe for this Rolls. I like the container that for the Water, because, it won't take space like the pot on the table, is that water container for this make rolls specifically? Where can I to buy it?

    It is very hard to make it because it breaks every time I try to roll I started using two sheets and still it breaks,do you have any tricks so it becomes easy for me to roll

      From my garden to our dinner table :-) Herbs for my goi cuon, I used: Peppermint, spearmint, fish mint, flat chives. You can use from one to as many kinds of herbs as you like.

      Tùy loại bánh tráng dày hay mỏng nữa chị, bánh của mình khá mỏng cho nên nước nhúng bánh tráng mình dùng là nước nhiệt độ phòng nhe.

    If i serve this spring roll for appitizer for dinner for my friends, what will be good to serve to complete as a main meal?

      Hi Sang, you can serve Grilled Salmon/grilled veggies/Teriyaki Sauce with steamed Rice, or grilled pork chops/Rice. There are a zillion recipes on UA-cam that can be help :-) Happy cooking!

      Uyen Nguyen em nói nước dừa tươi hay nước cốt dừa? Nước chấm này béo rồi đó em, không cần cho nước cốt dừa đâu. Nước chấm rất ngon, em làm y theo chị ăn thử trước đi nhé.

      You can find that in Asian Super market like Vietnamese supermarket mostly they carry that.

    hm, i thought we should rinse the hot noodle with cold water to make them less stick to each other? you rinse with hot water? can you explain why? I mean with different kinds of noodles such as "my" or "hu tieu", would we rinse with cold or hot water? this is "bun" is softer than my and hu tieu or banh pho or bun bo hue. I like that Vietnamese noodles are too many variety and delicious for different dishes of how we prepare the dishes! i am not even sure how to call each kind correctly in American language!

      Hi Giu, please check the description box for more information about cooking the noodles. I always use fresh egg noodles and banh pho noodles, these two doesn't need to be rinsed and they cook very fast. But you have to serve the cooked noodles right the way or add sauce to it so it doesn't stick together. I soak Bun bo hue noodles the same way but for 20 mins. Hope that helps, have a great weekend!

    Do not confuse the different between "spring roll and summer roll". Spring roll have to deep frying in oil but not summer roll.
