Hi Amy, about milk...people have a hard time digesting milk because it is not raw milk. When the raw milk is processed (Pasteurized and homogenized) the lactase is removed from the milk which is needed in order to be able to digest the milk. The "lactose free" milk is milk that has had the lactase added back in. Raw milk can be digested without issue by those who have had issues with the conventional milk because the lactase has not been removed. Have a lovely day! ~Angel
In our family we have people with dairy issues and gluten issues. For each condition there are pills that work to alleviate the symptoms. We cook as much as possible with modified ingredients. If there is a special event or we go out to dinner and there is a particular meal we want, we take the pills. Once you get used to changing how you cook, it's no problem. You do a good job, Amy!
I am lactose intolerant and this condition runs in my family. It is my understanding that our intolerance is due to the fact that we do not have sufficient enzymes in our stomachs to break down the dairy proteins. The lactate pills essentially are the needed enzymes that break down the dairy so we can digest it. With this in mind, I find that I can use the lactate free products without the adverse effects of the dairy or I can take the lactate pills when I use regular milk products.
Love when you put the recipe on the screen. Easy to stop the video and write it down. Always love your videos and love that you make more food for a few days. I need that in my life LOL!
Hello Amy, my little tip of the day, when you wrap your pudding, place the plastic wrap on the pudding itself. It prevents a crusty layer forming on the pudding.
My daughter (8) and I are lactose intolerant and we use Fairlife Milk. It has the nutrients of whole milk without the lactose. We minimize the cheese we eat but don’t avoid it. She doesn’t like sour cream but I do and I use that minimally. Mozzarella cheese or cheddar cheese doesn’t bother us so we eat that. When we eat ice cream we just eat regular ice cream and deal with the consequences later LOL Sometimes it’s worth it 😂. Since she’s young I avoid giving her those lactaid pills because I don’t know what the long term effects are so we choose to avoid specific foods. If she wants those foods she understands how her belly reacts and she chooses whether or not to eat those items.
We make orange walnuts at Christmas and they love them! You cook orange juice and orange rind plus your other ingredients to soft ball stage and coat your nuts! Delicious!!
My pediatrician said by using the lactose/lactaid pill it may help your body to begin making the enzyme on its own. My middle child had such an issue that I learned they put milk in breading at Mickey D's. So I would go with the pills. Worked for us.
I was lactose intolerant for many years. I do the lactose free milk and I did give up all dairy for years as back when I was intolerant they never had the dairy free cheeses etc back then. I do the lactose free milk but I still eat normal cheeses, feta parmesan etc and I find it does not worry me anymore. I had no idea there were tablets to help. I would have picked tablets so I could eat dairy. I am from Cape Town South Africa so our meds are different LOL
We called these little pancakes “silver dollar pancakes” because of there size and mom would warm Rogers Golden syrup with a small amount of lemon juice, it was delicious

I am 48 Yeats old. I have always had trouble with dairy. I have to drink skim milk. I can have mozzarella, Colby jack, provolone cheesr with no problem if it says pasteurized skim milk. If it is made with 2 % milk I get sick. If I really want ice cream I take 3 pills then I am ok. Some Breyers ice cream is lactose free. Back in the day stores didn't have lactose free ice cream. Hi @amymaryon my neighbor made us a chili cheese hotdog cornbread bake she took two boxes of jiffy cornbread mix made them according to the instructions poured in a 9x13 baking dish layed 8-10 hotdogs she used beef in the pan then she poured three cans of hormel hotdog chili no beans but you can use the bean if you want and spread them over the hotdogs then topped the whole thing with shredded sharp cheddar cheese and baked on 400 for 35 mins and surprisingly it was really good it was when it was done you had a hotdog chili and cheese wrapped in cornbread lol it was really good
Back in 1976 my partner was born dairy free they didn't have the stuff they have now so he had to go with out but he grew out of it, he was 9 when he started being able to eat what he liked imagine telling a 9 year old he can now have ice cream again lol x

I am on the alumni there and I cannot encourage you enough, to contact them and share your question.They teach that humans are the only creatures on earth that insist on feeding and consuming milk after weaning. the human body changes digestion after weaning as we get onto solid foods. Milk is top of the list for lung and allergy causes. You can take a pill but eventually the body is going to fight back. Please call them and put your question to them. It could help you to avoid serious health issues for your family in the future. All the best.

Well this morning was the hubby esophagus stretching and biopsy, prayers that esophagus cancer hasn’t returned. If so this will be his 3rd battle. For last 3 1/2 years life is impossible to be normal.
My Daughter is a celiac, most dairy products she can’t have without being ill with her stomach, yet most dairy free products are bland. She does however eat dairy free items and she had to have waysoy milk as a baby as other formula made her projectile sick. X
I’m curious how they would do with raw or even regular (not UHT) pasteurized milk. My mother is now lactose intolerant, yet as a child she drank raw milk with no problems. I don’t recall even hearing about lactose intolerance until UHT came along. Now it’s so prevalent. Cheesemaking instructions always specify not to use UHT milk because it won’t culture. Seems that says something about it’s digestibility. Raw milk is becoming easier to find in stores, might be worth a shot.
Hello Amy, my son used to get bad lactose intolerance when he was younger, did switch to vegetable milk (rice,soy, almond etc) for a number of years. With time, the intolerance did go away, by reintroducing slowly small amounts of dairy products with low lactose like mozzarella or goat cheese (with a meal containing protein) making sure if he would digest well, i would introduce more slowly bit by bit. He now enjoys dairy and vegetable based dairy products
Lactaid pills are the enzyme required to digest lactose. Those that are lactose intolerant don’t produce this enzyme. So, if you were say, vitamin deficient, you would take vitamin supplements. If you lack the enzyme, take the enzyme. My opinion. Plus, Lactaid milk is milk with the enzyme added to it. So, if you drink Lactaid milk, you are already taking the enzyme.

Personally Amy, I grew up with a dairy problem but there were no products like there are today so taking a pill was my only solution. I stayed away from as much dairy as I could except for the fact that my mom cooked with a lot of cheese on weekends ( not so much on weekdays), so this is where those pills came in handy or when we would go out to dinner at a restaurant, those pills worked awesome because restaurants use a lot of butter and cream. But I am happy to see all the new products and trust me I have switched to using the lactaid free version. And it’s been so helpful. I still eat my cheese on my pizza on weekends but I have to use the pills when I do. It’s just what I personally do.
I would stick to the lactose free. I think that is better than having to take pills. My daughter had some issues with dairy after Covid. She did not like the lactaid pills. So when just swapped out dairy for her.
I’m lactose intolerant and can eat cheese in moderation. I use lactose milk for everything I use it in all my recipes. My husband is not lactose intolerant and he can’t tell the difference in the recipes I make. Even when a recipe calls for cream I use milk and thicken it cornstarch. I would just stick with the lactose milk. I don’t use the pills.
Well I have tried both ways of dealing with lactose , for me the pill only worked if I took it every other day but after a while it stopped helping at all so that was a bust. The reality is that lactose free is the best way and the pill the dumbest way, you have to rely on that maybe it gets better when he/them grow older but if it doesnt thats just the way it is. Lactose free is a lifestyle you just have to dive into it for your children❤❤❤

I have lactose milk in the house for use all the time, but also use Lactaid pills before having things that I have out already made ( like if I have cappuccino) so I enjoy having those things out with friends and family.
My kids ate ice-cream sandwiches some mornings 4 breakfast. I was like it has dairy in it. Lol. They had something on their stomach b4 school. It worked 4 me.😊
I have a son that is lactose intolerance, i found out when he was an infant. He began with soy products, then later the lactaid milk, now hes able to drink milk 1-2 percent, but not in excess. Hope that helps

We like sweet cornbread too. Grew up in Southern California now living in Florida. Yes the like the savory here that you bake in a cast iron pan. Not this lady will continue to cook the sweet lol
I am 40 years old and have been lactose intolerance for my entire life. I have found that SOME "lactose free" products I can handle just fine, like the milk, but sour cream and cottage cheese are a no go unless I take the lactose pills. I can say for sure that the pills don't always work 100% when you have things like regular milk or ice cream, so I just make sure I have a small amount of the food and a lactose pill when I want to partake in it. I will end off with this, it is ALWAYS better to follow your gut (literally) when it comes to what is best for your own digestive system. The kids will figure out over time when they are better off just taking a pill, having the "lactose free" version, or if they need to do both to enjoy the food. It gets easier over time. OH and let them try the frozen yogurt at the Sam's Club Cafe/snack bar. I can eat it with no problems what so ever and it is very good, you can't tell it isn't regular ice cream.
Good morning ! My son and i both have a dairy allergy, his started off being lactose intolerance and then developed into the allergy. My advice would be to stay with the lactose free stuff and not rely on the pill. Also watch closely and make sure it doesnt turn into a full blown allergen.
I would stick to the lactose free stuff if it works 4 your kids. Taking pills every day would be a challenge cause if they forget or some hidden dairy would make them sick. I have life threatening dairy allergies, so it is just my opinion.
@amymaryon if you have a Krogers near you we find a lot of lactose free stuff there and it is usually on a really good sale at least once a month or so. We also have nut allergies so that puts a extra challenge in our milk adventure. Good luck !!
I understand having to cook for the whole family with one that has food allergies. My youngest has a gluten intolerance along with allergies to dairy, food coloring and food peservatives. It is a struggle.

I think it's called "penny" casserole because it's from the Great Depression era when a woman had to get creative and find ways to feed her family for pennies.
Here is my thoughts on the stomach issue with milk if they make a2milk that takes out the protein that upsets the stomach why don't cheese makers use that type of milk to create cheese. My thinking is that the cheese would not hold together. Have you tried plant based cheese? Wonder if that would be better for the stomach. I'm older and am having issues with dairy and I'm sure its from my medications on top of the milk. I take lactaid too. It's just easier and it works.
We have done that route with another child...and was not happy with the results at all ..as i noticed they just outgrew them so I'm hoping for him the same
Amy, you're talking about taking the kids to the doctor, ask the doctor about Jentzen and his supposed lactose intolerance and have him tested and find out what is really going on wiht him. Then check with a nutritionist for a healthy diet for him and any conditions that h e might have. Get advice for your child from an actual doctor and not people on the internet.
Please take your kids in for allergy testing. There is a big difference between lactose intolerance and an allergy and different types of each. The treatments and lifestyles are dependent on what the true nature of the problem is. Your kids really need an actual diagnosis to get a handle on good solutions moving forward.
LOL! As a Southern gal, I understand about the cornbread. I put sugar in mine too, but not a whole cup. 1/4 cup at the most. I say it's a happy medium lol...😁

When we were younger we had a lot of peanut left over from the holiday we would make homemade peanut brittle

We do cream of chicken and cream of celery in our food! But we all find cream of mushroom disqusting!

I heard of someone in my family switching to a2 milk and doing better on that then anything else.
Better to just avoid the ingredient that causes trouble. That teaches the person to make the healthier choice for their body.

I think cooking with lactose free is the way I’d do it and then carry the tablets for eating out at restaurants, church and friends homes.

I love sweet cornbread but the rest of my family likes the savory.
Hi Amy…you mentioned you needed to clean your baseboards. Can you share how you do it? I clean mine but it sure is a chore! Hoping you have an easier way!

We like sweet cornbread too. Grew up in Southern California now living in Florida. Yes the like the savory here that you bake in a cast iron pan. Not this lady will continue to cook the sweet lol

I am 40 years old and have been lactose intolerance for my entire life. I have found that SOME "lactose free" products I can handle just fine, like the milk, but sour cream and cottage cheese are a no go unless I take the lactose pills. I can say for sure that the pills don't always work 100% when you have things like regular milk or ice cream, so I just make sure I have a small amount of the food and a lactose pill when I want to partake in it. I will end off with this, it is ALWAYS better to follow your gut (literally) when it comes to what is best for your own digestive system. The kids will figure out over time when they are better off just taking a pill, having the "lactose free" version, or if they need to do both to enjoy the food. It gets easier over time. OH and let them try the frozen yogurt at the Sam's Club Cafe/snack bar. I can eat it with no problems what so ever and it is very good, you can't tell it isn't regular ice cream.

i would ask the doctor when they go to their appt. You should have your children tested before trying all different diets.

Good morning ! My son and i both have a dairy allergy, his started off being lactose intolerance and then developed into the allergy. My advice would be to stay with the lactose free stuff and not rely on the pill. Also watch closely and make sure it doesnt turn into a full blown allergen.
I would stick to the lactose free stuff if it works 4 your kids. Taking pills every day would be a challenge cause if they forget or some hidden dairy would make them sick. I have life threatening dairy allergies, so it is just my opinion.

@amymaryon if you have a Krogers near you we find a lot of lactose free stuff there and it is usually on a really good sale at least once a month or so. We also have nut allergies so that puts a extra challenge in our milk adventure. Good luck !!
I understand having to cook for the whole family with one that has food allergies. My youngest has a gluten intolerance along with allergies to dairy, food coloring and food peservatives. It is a struggle.

Here is my thoughts on the stomach issue with milk if they make a2milk that takes out the protein that upsets the stomach why don't cheese makers use that type of milk to create cheese. My thinking is that the cheese would not hold together. Have you tried plant based cheese? Wonder if that would be better for the stomach. I'm older and am having issues with dairy and I'm sure its from my medications on top of the milk. I take lactaid too. It's just easier and it works.

Has he ever been tested for allergens in the milk. He might be able to get shots to where eventually he can build up his tolerance for dairy products.
We have done that route with another child...and was not happy with the results at all ..as i noticed they just outgrew them so I'm hoping for him the same

Amy, you're talking about taking the kids to the doctor, ask the doctor about Jentzen and his supposed lactose intolerance and have him tested and find out what is really going on wiht him. Then check with a nutritionist for a healthy diet for him and any conditions that h e might have. Get advice for your child from an actual doctor and not people on the internet.
I already did and she said the same thing.. whatever works they don't have enough evidence for long term what is better to do 😉

Please take your kids in for allergy testing. There is a big difference between lactose intolerance and an allergy and different types of each. The treatments and lifestyles are dependent on what the true nature of the problem is. Your kids really need an actual diagnosis to get a handle on good solutions moving forward.

LOL! As a Southern gal, I understand about the cornbread. I put sugar in mine too, but not a whole cup. 1/4 cup at the most. I say it's a happy medium lol...😁
