i really like the shots from the failed attempts. it adds to seeing the right version when you can compare it with something wrong.
I appreciate that you guys show the mishaps and miscalculations that naturally happen when one is making a new recipe. This is encouraging to people who are intimidated by cooking and think that everything always goes smoothly and has to be perfect in order for a dish to come out alright. Great episode.

_Zunda_ (sweet _Edamame_ paste) is a part of northeastern _Honshu's_ (the main island of Japan) local cuisine.
4:25~ _Shiratama-ko_ and _mochi-ko_ are made from the same, glutinous rice. The difference is when the rice is ground: _shiratama-ko_ is made by grinding the rice with water (usually the water that was used to wash the rice), while _mochi-ko_ is made from rice that has been dried prior to grinding.
So that's the actual name for the paste... Nice, nice.
Now that is confusing, I heard "glutinous rice" and was wondering how could that be since rice doesn't contain gluten, turns out the word doesn't actually come from gluten, TIL.

Have you seen Emmy Made in Japan's mochi video? She has a machine that cooks the rice and then blends it into mochi outer layer.

It's just a pinch, but don't worry, it really doesn't seem like it has salt in it when you taste it.

Souvenir is an interesting translation for お土産(omiyage) since it’s a little simple? Typically omiyage are souvenirs that you buy to give to other people when you return from your travels, which is why they say “it’s not omiyage, I’m gonna eat it on the train”

Alvin should find his own style. I like him and the foods, but an imitation of Babish's act doesn't fit. Maybe something that lets him emote more (like with a visible face on camera)?
He actually has his own channel on UA-cam! The recipes he makes are completely different and he puts a lot more personality into the audio, visuals, and editing. It’s completely captions, so no voiceovers, and I think he does it really well. Definitely check him out!

I would knead the microwaved dough with gloves by hand, you can do it on a non stick mat, with oil on the fingertips if necessary. This would be easier to clean and require less equipment. Lovely vid!
