@Brian M difference in texture, the way the omlette is done in India, it's quite savory and spicy. The savoriness combined with the crisp edges and the soft center makes for a very nice textural combo inside the roll.

The most important ingredient to tenderise the mutton is papaya peel off's paste without which mutton is not gonna become soft enough go well with rolls 👍👍
Hi Varun great going with the channel but with all due respect it is to inform that in Kolkata we usually do not use Mustard oil to cook the mutton for the purpose of roll. Mustard oil is generally used in dishes of fish and other few vegetable items. Moreover in Calcutta roll makers use Lacha Roti than usual flour roti. So just a short overview of the session. Anyway I really like your sessions they are fantastic!
