    I enjoy your channel so much. While I'm an old hand gardening and preserving, I'm not too old to learn something new. Your canning potatoes video was the most surprising for me. The most helpful too! My husband & I were raised and spent most of our life in the appalachian mountains so we had a root cellar to keep potatoes in all winter. After moving to Flordia 10 years ago, potatoes are the one thing that stumpped me. It so hot and humid, potatoes rot in no time, even in the air conditioned house! I had never even considered canning potatoes, just complaining about it! That's called, "being set in your ways". It happens to old people even if we don't realize it 🤣
    We loved the potatoes canned it broth. Now when I want potatoes I use a few and I can the rest doing a small batch in my pressure cooker. Its getting so my husband is wanting the canned potatoes more than the fresh ones. Old dog, new trick! 🤣👍

      What a blessing! I’m so glad you’ve found a new way to enjoy your potatoes. 🥔 I have to can them out of necessity, too, as they sprout within weeks if I don’t!

    Peter Piper picked a peck of pickled peppers? I loved that rhyme as a child. Gran & I often played who can say it faster and how many times can you say it without messing up. Listening to you get tongue tied reminded me of that happy childhood memory. 😊👵

    I just canned green beans today. I snap them into 1-2 inch pieces and mainly use them in soups. They are much easier to get in the jar though I agree lying the jar on its side would help you as that is how I load cucumber spears when making pickles. I must say you gave me a chuckle watching you wrestle those beans into the jar lol. I was surprised to see that I had the same hand grater as you. Have had it about 30 years but rarely use it now. It is great for if the power goes out. Also have the same vacuum sealer, whisk and pressure canner! My steam canner is a bit different but I just love it! I think I will give your pickled peppers a try. Thanks and good job on putting up your harvest!

      I giggled a bit myself lol. I never thought of laying the jar on its side to load! 🤦‍♀️ I’m so thankful for this community. ❤️
      Yes, I LOVE that rotary grater!! I snagged it at an eBay sale many years ago. So glad I did!

    Girl you have been busy! I haven't canned anything since the 7th of this month but I have been busy freezing okra and dehydrating celery, tomatoes, and the veggies I juiced for the V8 juice I canned. I powdered just about everything except for some tomatoes. I also dehydrated some eggs and powdered that yesterday. Today, I've taken it easy. Enjoying the much needed rain we just got! I love your stuff, Hun! Thank you for putting the info out for us! Bless you and your family! Oh, and I would also like to know how to can onion broth. I make my own dried minced onion, onion powder, and dry onion soup mix but interested in canning the onion broth. Thank you

      Rain? What is this mystery you speak of? 😂 It’s been nearly a month since we’ve had decent rain!
      You’ve been busy, too! I know it feels good seeing all that food on the shelf and in the freezer. ❤️
      For the onion broth, I fill my roaster oven with chopped onions and onion scraps, cover it all with water, add some ground turmeric (and salt, I think), and simmer on low overnight and can the next day.       @@foodprepguide Thank you very much!! Yes!!! We finally got rain!! Right at 9 tenths today!! I was praising Jesus for it!! I cut back watering my garden to every other day to keep my water bill down! Oh, I also harvested corn a couple days this week and I just put it in freezer instead of canning it. Later, when I get potatoes, I'm going to can veggies soup with what I've put up in freezer. Hope y'all get some rain soon dear! Thank you!

    If you will lay your quart jar on it's side on a clean towel it will be so much easier getting those beans in the jar. I made pickles peppers for first time this year too and love them! Am using your fruit juice zucchine snacks idea and have told several of my friends about it too! Thanks!

    Question on headspace- see that you have peppers sticking up beyond that. Please explain.

      It’s best to stick to the recommended headspace to a “T.” I should’ve gone through and broken off any pieces that were sticking above the headspace line.
      That said, after canning for a long time, you get a feel for things that aren’t too big a deal.
      With pickled peppers, it’s important for the liquid brine portion to be at the proper headspace. I’m okay with a piece here and there sticking above that line because I know that they will shrink & “flop over” a bit once processed, causing them to settle into the brine.
      Still, don’t take that as a recommendation. I was working quickly and should’ve snapped them off. 🙂

    I have never made pickled peppers either. I have learned that I do like pickled things (bread and butter pickles are my favorite!! What do you do with them? Do you just eat them, or do you use them in a recipe? I just know I would be the only person in my house that would eat them, so I'm trying to decide if I should try it. lol

      They make amazing pizza toppings! I also drain the vinegar and blend the peppers with mayo (using an immersion blender), and use that as the base sauce for all sorts of cold pasta salads!

    I've never canned potatoes before because I never thought I would like the taste. But I was thinking about canning my small ones this year and leaving the larger ones for baking. How do you make that onion broth? I'd like to try that.

    Why don't you use fresh herbs during canning?

      Herbs can change the pH of a recipe, so it’s a potential issue for water bath canning, and others can get pretty bitter when canned. But they’re not totally off limits.
      I just say that as a general rule of thumb. We love fresh rosemary & thyme when we can herbed potatoes! 😋

    I have a heck of a time freeze drying herbs. They end up resting on the heating pads and bunching up I pull them in and out! Anybody have some secret tips?

      Is it possible the trays are too full? If I put a tray in and the herbs touch the pad above it, I’ll take it back out and remove some until it doesn’t touch anymore.

    Hi, help question here. Is it safe to EAT canned raw tomatoes with fresh basil and garlic cloves. I didn't know it would lower the ph. Do i just throw away or are they saveable ? Ty

      When you canned the tomatoes, did you acidify them according to standard canning practice with either lemon juice or citric acid? I would get pH strips and measure the acidity to see what you’re dealing with - ua-cam.com/video/WQV1IQDtBq0/v-deo.htmlsi=1JLsiclxmDW4if1q

      Just to clarify, canning salt isn’t an acidifier. Salt has no effect on a canned item’s acidity or shelf-life.

      @@foodprepguide Hi, i have used Citric acid . I don't remember if i used it in my last batch of tomatoes with the fresh basil and garlic. Thx for ur help
