Scallops with Creamy Shallot Sauce - Best Sauce for Scallops

  • Today we are making a pan seared scallop dish with an easy and creamy sauce with shallots and tarragon. The sauce is prepared with reduced white wine and cream and packed full with flavors and pairs perfectly with seared scallops. In this recipe, I'm using smaller bay scallops which take less time to cook compared to great scallops, but they are absolutely sweeter.
    I've used a carbon steel pan to sear the scallops, if you are using a teflon pan, add 20 or more seconds to the searing time!

    Ingredients:
    • 5-6 scallops
    • 1/2 cup heavy cream
    • 1/2 cup white wine
    • 2 shallots (finely sliced)
    • 2 tsp tarragon (finely chopped)
    • 100 g butter (unsalted, cold), + 1 tbsp for the scallops
    • ½ tsp crushed black pepper
    • Salt to taste
    • 1 tbsp of rapeseed or canola oil
    • 1 tsp chopped chives to garnish
    • ½ tsp lime zest to garnish

    Beautiful! Great prep, instructions, sounds, and video work as usual. Scallops are one of my favorites but I don't get them often enough. Would go well with some champagne to ring in the new year and say goodbye to 2020! Cheers!

      @@HungryManKitchen hahaha well technically scallops eat plankton, and plankton are vegan. So that would make scallops 2nd hand vegans. And when I eat them that will make me a 3rd hand vegan! Look for that reference in my next video on Wednesday! :-)

    I'm not sure if I ever knew what I scallop looked like when it is raw, amazing that it has taken me 57 years to find that out ;) I also had a bit of an epiphany when you strained the sauce into the saucepan, it was like a bulb went off, SAUCEpan 😁 I guess one is never too old to learn, eh? Of course the finished product looked simply divine. Do they come in American sized portions? 😋

    I’ve made this sauce recipe many times. Simply the best. Of course my scallops come from Digby, Nova Scotia. Home of world’s best scallops. I like everything about this presentation. One thing though - chef does not cut muscle off scallop. Small attachment on side of scallop. Why?

      Thank you! Some people remove the feet (connecting muscle) as it feels tougher than the rest of the scallop, but it's perfectly edible and I wouldn't waste any edible part of such an ingredient.

      Yes, you can reheat and stir in a bit liquid (milk etc.) to re-use it.

    I am serving 3 scallops to each of my 7 guests. How much roughly must I use for making sufficient sauce? I gather your 5 scallops must have balance of sauce to spread on 3 plates?
    I am contemplating to use red wine, so the colour is pinkish, with sea-sampha to garnish, is this a good idea? I may still sprinkle the chives and lemon zest.
    But as I have a few courses to serve, and no helper on the day, this starter dish, is it workable that the sauce is made 3 hours ahead and kept in an oven with 50 - 80C warm environment, I could lowly heat it up before plated if there is a skin membrane. Thank you for this sauce recipe. (18 May 2022)

      You can triple the sauce ingredients, it will be enough for 7-8 plates with 3scallops. In the video, I had more than I needed. With regards to the warming up the sauce, just add a little bit milk and stir constantly while heating up to avoid clumbs or bad texture.

    Could you sear a couple of shrimp the same time you sear the scallops and put them in the sauce also? And put the sauce shrimp and scallops on some rice or pasta to make a more filling meal? I think so.

      I would thin the sauce for the shrimps if you are gonna put the sauce on rice. I would also very briefly sear the shrimps and then cook in the thinned sauce to finish. Just an idea ;)

      @@HungryManKitchen There you go, of course, good thinking. Glad I asked. There used to be a frozen Stouffer's product, Shrimp and scallops mariner. Came in 2 boiling bags, with the seafood and sauce, and another bag with rice. It was expensive for the 80s, like 6-7 bucks. I was single then, I'd treat myself to that sometimes. They don't make it anymore. That's what brought me here.

    *I like the recipe. Not sure how you can substitute parsley for tarragon, as tarragon has such a potent flavor. You called those bay scallops, interesting in Hampton Bays NY our Peconic bay scallops are about the size of a gummy bear, those you used we would call small sea scallops, though both are very good eating. While I understand the small portion, I would and will double the amount of scallops. Nicely done.*

    1) That’s not gently washing the scallops.
