Once found forty five tiny white eggs from my polish crested chicken. She loved to lay in the back of this old semi trailer that was used for storage. Every single egg, save for a few that fell off the shelving unit and cracked, was excellent condition. Little lady was a champion, had blue feet and ear lobes, a beautiful white feather afro(often had to give her a top ponytail using baby hair bungees, so she could see) and she had inch and a quarter long blue spikes which she once killed a squirrel qith instantly that came in and tried to steal her food. She was a queen, a protector, an exceptional layer, until the end. May she rest in peace!

I love Swiss cheese too since I was little. True story..when I was 4yrs old we had a cool room. I opened the door stood on a milk crate to reach the Swiss cheese block to throw it out and my mum caught me and said "what are you doing"? I replied "The mouse made holes in it" she said who told you a mouse ate it. I said Tom & Jerry...🤣🤣🤣

I have a home cook in my brain rattling off all the egg dishes I've made before, kinda like Bubba from Forrest Gump, except with eggs.

I am surprised that Jacques never made a frittata. I have a feeling that you both will be making many now. I make frittatas often and I will freeze portions. The 12 inch cast iron holds about 18 eggs. I usually sauté onions and garlic. I add in a lot of thyme, oregano and other herbs and salt. I add in chopped up greens, then add the eggs. I put in the oven at 400 and take it out when golden on top. There are so many different ways to make. Cool purple potatoes. I sometimes add chopped up green onion tops when done as a topper. I enjoy these videos so much. 😊

We love making puffy German pancakes/dutch babies with all our eggs. My basic recipe is for a 9x13” baking dish and it is:
6 eggs
1 cup milk
1 cup flour
And that is it for the base! You can add vanilla, cinnamon, citrus zest, etc to go sweet or add in savory herbs for more of a dinner side dish like a Yorkshire pudding. Blast it in a blender while your baking dish is preheating in a 375• oven with a few tablespoons of butter. Pour the batter into the pool of melted butter in the hot pan and put it right back in the oven for 15-20 minutes. It will puff up and become a crazy bubbly landscape with toasty brown edges and top. I like to squeeze fresh lemon or orange juice all over it and sprinkle with powdered sugar as a breakfast dish 😊
Okay, just screenshotted this entire comment and cannot wait to give it a try. Could I use wheat flour, or is that too heavy? I can always experiment, I guess! Thank you, have a lot of flour to get through! And always have something from the garden to add to it, even homegrown Meyer lemons!!! Thanks for the recipe! I look forward to making them in the air fryer, oven, and camping dutch oven!! Now to find eggs, since I no longer keep chickens.
@@RealBradMiller I actually use gluten free flour these days because one of my children have celiac disease. I don’t know that I’ve ever used straight whole wheat flour but it’s worth a try! If it fails then you just have some eggy flat bread instead 😆

Such a fun video, I was laughing the entire time haha. Frittatas are perfect for using up extra produce and leftovers - easily a kitchen sink type meal.
Through selective breeding, chickens have been modified to have increased production of eggs which isn't healthy for chickens. I believe if there was a controlled variable chicken that wasn't changed for increased egg production; would have the more favorable egg. We might of really made a poor choice with quantity of eggs over quality and nutritional value
I agree didn't know that ISA Browns lay alot and might have problems during the older yrs, wish I got one those heritage breed. But I do feed my back baked egg shells some cooked egg they love it.
It's always a fun, wild ride when Kevin & Jacques have a project together! I love it! I hadn't thought about drying and grinding up peppers into a paprika mix until you all did that and now I am 100% going to be trying that this season. I had already planned to turn one of my Greenstalks into a Pepper Power Planter this year and now I have even more goals! Including making a frittata. Thank you all!

fruit curd (eg lemon curd) & merengue make a wonderful combo for using up eggs. The curd calls for mostly yolks, and then you make little crispy merengue cookies with the extra whites.
Lemon curd and meringue is just a few sliced fruits away from a pavlova 😁 a favourite of Australia/New Zealand (we're still arguing who came up with it first lol)
Last month I made a frittata with purple potatoes from my garden. (Inspired by you guys to try to grow potatoes) 😀 no borage in my frittata but I love basil in eggs with cheese. Once my cherry tomatoes and basil come in, more frittatas are in my future!

Can I give you my mothers egg whipping tip? Tip the bowl to make the liquid extra deep and whip with your fork in a circle from top to bottom like convection as fast as possible to incorporate more air into your eggs to make a super high fluffy frittata/omelet/scrambled eggs/pancakes/whathaveyou! You can get a good half inch of lift easily.
Calendula is high in lutein and zeaxanthin, which are great for eye health. I’m sure that becomes part of the nutrition of the egg and worth feeding them. I’m sure both of you have very nutritious eggs with all the garden plants you feed them. 😊

yeah. more harvest to table cooking. Big egg? How about savory meringues, or sweet ones with garden freeze dried fruit. Hmmm... Or sweet spices. (Meringues cookies are basically egg white whipped stiff, with dried flavors, slow cooked to be crunchy on the outside, and chewy on the inside. Great for Keto, low fat, etc. They can be created in a variety of shapes. )

Ha ha, great video. Can you do a video on the paprika, what peppers you used? So several years ago I too planted some purple potatoes. I never quite get all the potatoes so they just keep coming back. I have to admit, they aren't attractive to cook with lol but they taste like potatoes so I'll take it! I've also got a lot of eggs, so thanks for the idea.

Omg I used to do the dirty strip when I was a kid at my grandmas house . She had an oregano plant that is a small leaf variety , bush like and with small leaves and we played out in the garden making clay patties and adding fresh oregano 😀 it was so much fun 🤩 the sound I loved it! Yolk color i find is richer when organic feed or herbs are given. Doesn't mean the hens are at optimal health. I monitor the health of my hens by the shell. Fragile vs more robust when cracking. Also by feathers, beaks ie physical appearance of the hens😮

Did I spy some nasturtium's in your garden? Those would make a nice addition to a frittata. Either way it looked delicious!! Suprisingly from my experience the breed of chicken also makes a difference in yolk colour. My hens all have the same diet but my white leghorn egg yolks are always paler than my barred rocks egg yolks.

This isn't necessarily something I've done because I have had too many eggs, buuuut, if you have a dozen of eggs you don't know what to do with, make a leche flan with the egg yolks and then make roasted pepper egg white bites!
Leche flan recipe
11 egg yolks
1 whole egg
1 can condensed milk
1 can evaporated milk
Mix all ingredients, strain, and pour into pans with caramelized sugar and steam for 45 minutes.
Roasted pepper egg white bites recipe
Roasted bell peppers
Egg whites
Cottage cheese
Kale (or choice of dark leafy greens)
Pepper and salt to taste
Wisk up whites and cottage cheese, add in choppy veggies and pour into a greased cupcake pan and top with cheese, bake at 350f for like 20ish minutes

Make garden eggs benedict! Hollandaise sauce is mostly egg and poach a bunch of others for the team to enjoy! Top with whatever you like from the garden, you can even make Sourdough English muffins pretty easily if you really wanted to take it up a notch
