Multi jack would be expensive first of all. Single is less likely to cause issues and gives you more control of individual cables. If one cable is already stressed more than the others using a multi jack would apply the same pressure “on the already stressed cable” as the ones with less stress. This could cause that one cable to deteriorate faster after the jobs done or snap completely whilst the press is still on all three cables.

Why would you use a single strand jack on a multi strand anchor...?

As far as I know this anchor plate should have the same angle with the anchor rod.
