Both of those racks looked great but I'm team baby back. I like the taste of the meat better; it's sweeter to me. But I like the loin section better than the belly so that's probably why too.
@@BartlowsBBQ No .. they like the fat with the small bits of meat. I cook the whole thing and then trim it up for them. They do good work, barking for a living, so I figure they deserve a bit of smoke flavored barbecue. :)
Thank you. For a Kamado Joe, I just toss in 2-3 wood chunks barried underneath the charcoal. You will get all the smoke you need the first 3 hours. Using good lump charcoal makes a difference as well.
@@BartlowsBBQ great, thanks for the info. I have a Traeger but I think the konnected joe has me sold for the versatility. My only reservations is the konnected Joe is based off of II model not III, so I hope it won’t be outdated soon in regards to accessories.
