Try harvesting when they're about 50% ripe.

My neighbor sells the best tomatoes ever! He's an older man and he told me he does the same thing but he also sets a fan next to them. Something about the air moving around the tomatoes just makes them perfect

My grandad picked them almost at that stage wrapped them individually in newspaper and stored in the dark they lasted ages and were beautiful red and sweet when ripe

So helpful! I moved to an apartment so I only grow herbs now but when I had my garden, I tended to let my tomatoes (& cucumbers) ripen too much on the vine. Found they had a much too short shelf life and were often enjoyed by all the critters. Never even got to really taste my strawberries either because I quickly found out they were a hit with the blackbirds in my area!
I tried this. I harvested my tomatoes when they were green, and it took 1 week for them to turn red. Even after 1 month without refrigeration, nothing happened to the tomatoes; they had the same flavor as before.

@@ivamanral989yes! No refrigeration is needed. In fact you can even leave them after they ripen on your table in a bowl that has ventilation or basket. Since they are “organic “ and wasn’t sprayed like supermarket vegetables, your fresh tomatoes will last without refrigeration for a few days after ripening. 😄
Tomatoes also ripen from the bottom up, so by placing them upside down you are distributing the weight onto the least ripe end and youll protect it from getting soft spots.

Ha, reminds me of when I first started my garden: we live in an area with woodchucks, and they would climb the garden fence and taste test my tomatoes. Every tomato with even a hint of red would have a bite taken out of it (they never finished any of them - I just wish they hadn’t felt like they had to keep trying them in case they liked one of them 😅). I ended up completely caging my tomatoes, so now I can leave them on until they’re ripe if I want! But I agree picking them a bit early is great if something (other than woodchucks) is eating them.
I really love the totally vine ripened tomato flavor. About half the tomatoes I try to finish ripening inside get rotten spots.

My mother used to make fried green tomatoes when we were kids.
We had a huge garden. It had tomatoes, green onions, leaf lettuce, bell peppers, corn, green beans, carrots, radishes and red beets. She did a lot of canning.
A neighbor had grape vines and strawberries, her and mom would swap. Mom would help her make preserves, jams and jellies.
Mom would trade with her and vice versa.

Same here. We garden. Neighbors have chickens. We get eggs and a few cookies make it back to the chicken ranch along with garden crops now and then. Homegrown food hasn't went up much with all the inflation the government and banksters have put us through.
And all i had is rocks lmao

Fried green tomatoes are so good I miss them
If you want it to finish ripening fully then put it in a paper bag with a banana. It sounds weird but it works. Bananas release a chemical that makes fruits ripen even when it has already been picked.
That absolutely makes sense, because when I put all of my fruit in a fruit bowl they quickly rot!!!😮

I’ve had to table ripen a lot of green tomatoes after a storm came and broke the plant. Nearly every one turned red and was good like normal. Don’t give up it just might take a few extra days
These half-ripened tomatoes look like what our supermarkets have.
Growing up in the 70’s, every windowsill was full of unripe tomatoes, from my grandfather’s greenhouse. The smell of real tomatoes, will stay with me forever.

Also picking a bit early tricks the tomatoe plants into reving up production. Remember, the plants aim is producing seeds not food. Plus more plant energy goes to the rest of unripe fruit.

They dont even have to be 1/2 way red. Just into orange color. Your so adorable with the last 10 year info. I've spend almost 56 years learning how it's been done for multiple 10+ generations. Well before modern conveniences, and the last 35 years, learning how to do it their way, with modern conveniences. I still learn many new things every year. 😉
Personally I let them vine ripen for better flavor. Unless it doesn't matter based on specific tomatoes, there is a difference for the ones I've grown.

This tip saved my tomatoes! So, i live in finland and summer is pretty short, ths was the first summer i wanted to try and grew some tomatoes but when they were still green the weather changed very fast in august, the temperature dropped over 12 degrees celsius and i really tried to cover my plants because the weather got colder and colder. At the end of august temperature was something between plus 4-10 degrees celsius during days and at night it dropped under 0 sooo... My tomatoes were still greenish and i knew that yup, they will freeze and die so i cut them off and took them inside. I had no idea what i was doing 😅 I cut them because i saw this video! I had no idea you can cut them when they are still greenish. And it worked, after some time those tomatoes started to get some color and now i have a basket full of tomatoes, it's pretty damn awesome feeling when you can take a tomato in the morning and put some slices on top of the bread or use them while cooking. 😊

My family always harvest our tomatoes when they are in the orange stage. As long as you don't put them in the fridge, they will continue ripening normally. Occasionally had a couple of green ones in the pile, and even those ripened. Takes longer but does not go bad at all
A few years ago I picked a whole bunch of green tomatoes at the end of the season, put them in a cardboard box and promptly forget about them. I was really surprised at how many of them ripened to some degree.
Very good advice charcoal ash can act like a natural pesticide and add used coffee grounds to the soil it helps to hold moisture and nutrients

My tomatoes legit have weird bug holes when they're still green , ruined an entire tomato garden like 2-3 years back 😭
Oh, and by the way , fried green tomatoes are fantastic! Use corn meal to coat then you can use vegetable oil or olive oil to fry. 😋
These are the kind of little tips that make me wish ANYONE I knew was a gardener. I can grow just about anything, but how to feed the soil and harvesting tips are two that I'm always lacking on. It works, just....not the most optimal.

Same with many tropical fruits. Papaya / bananna.. i wait for the first hint of colour then pick so i actually get my harvest..keep inside until ripe. also always cut the stalk, not rip it out. This helps prevent the fruit from going mouldy while ripening

We make pickle green tomato in Turkey.You can't imagine how delicious it ia.Salt vinnigar and citric asit and water and green tomato.Wait 15 days in somewhere dark and booomm ready!!
i worked at a farm stand and we tried to always put the tomatoes top down, but when customers would pick through they would always turn them back up- oof it was exhausting to see that and have to fix it every time 😅
Tomatoes actually develop their nutrition on the vine.
When it comes to flavor, there's a huge difference between tomatoes that ripened on a vine and the ones that were picked unripe. You'll never be able to make unripe tomatoes taste as good and sweet as the ones that got to ripen normally, no matter what they will still taste like plastic and have zero flavor and aroma.
I take mine off the vine as soon as they have a hint of yellow. I put them all in a bowl together so they can "encourage" each other to ripen (there is a chemical process here that I'm blanking on the name for). They turn out perfect every time. Been doing this for 24 years now, since I started my first garden as an adult.

Someone said to ripen them in a paper bag. I've never done this but going to try it this year and see how it hold up to the ripen on the table trick
You can also wrap them with news paper or manila paper so they last long, I don't know the science of it. it just works, learned from my grandma
Been testing this lately with my cherry tomatoes. Feel like it has a little less flavor when ripened away from the vine but they do last longer

the reason why you can harvest tomatoes (and several other fruits/veggies) before they’re ripe is because they’re climacteric fruits! in short, this means that they produce a ton of ethylene as they ripen, and putting them in proximity to other climacteric (ethylene-producing) fruits will make them ripen properly even though they’ve been harvested :) this won’t work with non-climacteric fruits, most notably berries like strawberries/raspberries, which all need to be attached to their respective plants to be able to ripen properly!

Dwarf marigolds, planted among my dwarf tomatoes, in my flower garden, and among vegitables, remove all but bees. Three crops, one hole in a single lettuce leaf.
I pull mine when starting to yellow to prevent pests and birds from getting then and ripen on kitchen counter.
Sitting them on its stem was completely new to me
I never had a problem with pests when it came to my tomatoes....although my cucumbers kept reaching over to try and strangle them.

If you want to keep bugs away, put up a few birdboxes. Not to many or you'll have constant territory wars 😅😊
Here's another tip. If you harvest the tomatoes half-red, you can wrap them in old newspaper or something similar. This also supports your maturation process

My tomatoes barely make it to a tiny bit of blushing of red/yellow before they get eaten by the Squirrels. They seem to ripen red inside, but I figured I would be able to get them on the vine longer.
My tomatoes are growing and as of now I noticed they are getting a bit wrinkly. It has been a bit hotter in so cal in the 80’s. My watering is every other day or so. Do you think I need to water daily now? I use an all purpose fertilizer plus a bone meal.
I harvest them as soon as theres the slightest change from green to yellow, and then let them fully ripen on the kitchen counter.

For those of us who want the most flavor from our food because we are tired of flavorless food from grocery stores it can be worth it to let it ripen naturally and just be prepared to defend those plants from pests.
If you plan on using them right away, or have too many to worry about pests, just leave them on the vine to ripen. I believe that vine ripened are the most flavorful and nutrient dense, but I can't prove it. But the flavor difference between a vine ripened home garden tomato on a burger versus the one picked underripe in Mexico and shipped halfway across the world to your local grocery store to ripen in a backroom is very noticeable.
