Sad part about brisket is that you have to buy the whole packer brisket and trim it up if you buy them already chopped never buy the flat always buy a fatty choice brisket I just saved you all some time and money #Kansas City
The brisket looked very lean, it wouldn’t fall apart unless it had the fat marbling of a prime or choice cut.
I figured it had to do with the quality of the meat. Guess I‘ll have to find a butcher shop somewhere around here for the next attempt!
Perhaps you need to put som wood in your smoker for that additional smoke ring?

Haha, I guess the camera shot made it look that way. The fat cap was still there on the bottom. I only cut that big thick piece off the bottom then flipped it over and got all the fat off the top. The fat cap was there, just on the bottom. Thanks for watching. I had to go back and watch the video after seeing your comment because I didn’t remember taking it all off.

I wish I were recorded my 1st brisket. I did the same thing started with a 1/2 of brisket. I didn't know what I was doing it turned out terrible lol I love that pit barrel looking at getting one myself.
I think the main issue with mine was that it was just too lean. After thinking about it and reviewing what I did, I don‘t think I really did anything completely wrong. There just wasn‘t enough fat in it to break down and make it more juicy. Definitely wasn‘t even close to being prime. Almost no marbling at all in it. Anyway, thanks for another comment! And yeah, that put barrel is fun. It does ribs awesome!

Check out Costco. They sell a packer. It has the lean and moist and it’s prime also.
I actually got a Costco membership last month and checked it out. They had a ton pf briskets! Now I know where to get them. Thanks for the tip!

Actually, after further thought and investigation, I don‘t think I really did anything wrong. It‘s just the grade of the meat from WalMart. It was thin and pretty lean. Just not enough fat in it to render down and make it good. Although, I did enjoy it. I ate it over the next 3 days and the flavor was good, just not as tender as I would have liked.
Inject the meat. Reduced beef broth or tallow. Long rest after the cook is critical
Let it cool down to 180 before putting it in the cooler to rest.
