Hi Tammy, Boy does this bring back a lot of 0ld memories. I am 71 when I was around 11 this was the first thing I ever made, back then we just used left over mashed potatoes. I used my hands to mix it together. Sure made a big mess but got it all together and everyone loved it. I really loved cooking back then (still do) We lived out in the country and there was a field of cotton right off our back yard and my mama was picking cotton out back. I used to get to cook while she picking cotton in that patch. One morning she told me to mix up a cake mix and she said be sure and bake it in the bottom shelf. Will I did just that ... I baked it in the bottom shelf which turned out to be the Broiler. The gas stoves back then had a drawer on the bottom which was where the broiler was located. My mom said she could smell that cake all the way out in the cotton patch. She talked and laughed about that cake until the day she went to heaven. I sure do miss my Mama.

My mom made this all the time. Was a holiday favorite cause no one else on either side had ever heard of it. And it DOES slice a little easier if you chill it for about 30 min before slicing. Also, although we all did prefer jiff, she found that Skippy peanut butter would spread a bit easier.

This is a really good and tasty but rich candy to make. Very easy and you don’t need to refrigerate it unless you like it firmer. Mom taught us how to make this candy around the holidays. I believe they would call it poor man’s candy. I guess it’s when you only had potatoes and wanted to make candy and couldn’t afford anything that they came up with the recipe, I’m not sure. But it is delicious if you like peanut butter and sweets.
