    +Jen Pothilat you buy Maderia wine, where wine is sold. I buy mine at the liquor store, look for where fortified wines are sold.

      miserablemagical92 It isn't a super thick sauce, it is a thinner pan sauce.

    Too watery in my opinion and the wine or sauce didn't really evaporated

      Anytime a sauce is too "watery" you can always reduce it by cooking it longer. This pretty much always works. If you are needing to get dinner done quickly, turn up the heat just a bit.

    Isn't the chicken going to be cold by the time you've reduced the sauce?

      +Scott Adler it won't be piping hot, you could put the chicken on a plate and put it in the microwave.

      +Stephanie Manley I had the same thought -- too bad many cooks avoid the microwave when a few seconds of nuking can solve a lot of problems.
      By the way, I'm happy that you let your viewers know that corn starch must be mixed with COLD water!
      (I am thinking that for my first attempt at reproducing the sauce, I will use sherry instead of Madeira. I already have a bottle, it's less expensive, and a mistake will be less tragic.)

      +Jen Pothilat Bevmo, online, or at other large retailers. Sherry will do in a pinch.

      sanaa979 I would use dry sherry or chicken stock.

    Look delicious. My favorite too at the Cheesecake Factory. What is the brand and size of your pan? I need a nice big pan to fit five chicken breasts. Thank you for this recipe

      SueMesha This is a model of all clad that isn't sold anymore. I bought it on a huge discount. I bet they sell other pans though.
