This video is part of a series on how to cut vegetables for sushi. Cucumbers are often used for sushi rolls (makimono) and The Sushi Man goes over two main methods on how to cut them. The first method is a very basic and beginner friendly technique while the second method involves more advanced knife skills (katsuramuki). there is no reason to toss the middle of the cucumber, don't waste it just eat it.
The reason is because the seeds make the sushi turn soggy. You simply just eat the seeds when you've cut it off.
